Menus?

As long as the game isn't rained out tonight, it's our final baseball game of the season...which means I'm fresh out of excuses for not cooking real dinners anymore.
:-O  Hoping for some inspiration for some easy summer meals!  Here's what I have for this week:

Tonight: McDonalds (shhh....don't judge, we're super rushed, I don't even have time to take the kids home, we're going straight from daycare/summer camp to the field)

Tues: baked ziti (already made, go me)

Wed: heading out with some friends, Brian and the boys will probably eat the leftover ziti

Thur: chicken, some type of veggie and side

Fri: tacos

Saturday: going to a party at a friend's house, don't have to cook, woohoo!!

    We are not doing anything spectacular this week, so I'm not sure I'll be much inspiration but here's my plan:

    Monday:  leftover pulled pork from yesterday

    Tuesday:  fish, rice, and veggies

    Wednesday:  Grilled chicken salads

    Thursday:  We will be in Cleveland for the Indians game so ball park food

    Friday:  bbq chicken in the crockpot

    Saturday:  tacos

    Sunday:  something on the grill

    Tuesday: Brinner (Tomato & Spinach Omelet)

    Wednesday: Shrimp & Quinoa stir fry

    Thursday: Chicken, Sweet Potato Fries, Green Beans

    Friday: Pizza Pita & Salad

    Saturday: Steak, couscous, asparagus

    Sunday: Left over steak salads.

     

  • I am sort of back in the swing of meal planning, though our schedule is still a bit weird. I have been reading “Dinner: A Love Story” and it has provided me with some inspiration. Here are some plans for last week and this week. Tonight’s dinner is in the crockpot – woot!

    - Crockpot Beef & Barley, Noodles, Pears
    - Cheese & Bean Quesadillas, Corn, Apples
    - Scrambled Eggs, Blueberry pancakes, Sweet potato fries
    - Chicken Tenders, Parmesan Cous cous, Peas
    - Ravioli, raw veggies, fruit salad
    - Ranch Chicken, spinach spaghetti, peas
    - Kale salad with garbanzo beans, noodles, grapes
    Heather Margaret --- Feb '07 and Todd Eldon --- April '09

  • Monday - I forgot to take anything out of the freezer, so probably frozen ravioi, sauteed zuchini & garlic bread

    Tuesday - turkey burgers, broccoli & brown rice

    Wednesday - salmon, yams & spinach

    Thursday -  grilled chicken, broccoli & potatoes

    Friday - steak, spinach & ?

    I have no plan this week :(

    DH was OOT yesterday.  I bought a pack of break and bake chocolate chip cookies for dinner.  A few didn't make it into the oven :)

    Then the ones that did get baked I decided to experiment with the nutella I bought the other week.  Warm chocolate chip nutella sandwich cookies....OMG.

    Good thing DH was only OOT for one night ;)

    Sunday-Went to my parents' for Father's Day. We had wings, potato salad, veggies. For desert I made pineapple upside down cake and not yo' mama's banana pudding.

    Monday-Egg Salad sandwich on english muffin bread. And can I tell you how happy I am that this is back, like ridiculously.

    Tuesday-hot dogs and salad

    Wednesday-Ham bbq and fries

    Thursday-pasta with artichokes, cheese, sundried tomatoes, and spinach

    Friday-ribs and potato salad

    Saturday-Cioppino for my mom's 60th birthday, it is also my parents' 40th wedding anniversary. I ordered a cappuccino tiramasu cake from the french bakery in Millvale. I cannot stop thinking about it.

  • Absolute crap - fly by the seat of our pants week of food, I tell you! Between moving, unpacking, needing to pack for our weekend away tomorrow, the allure of the pool (by the boys - and someone has to watch them obviously!), cleaning out the rental house still, working full time, etc. etc. - I just haven't had the energy or time to make something decent.

    However, tonight, we are having pork chops of some sort since they are in the fridge!
