help: food for Abby's party q

We are having a cookout for Abby's party next weekend. I am getting hamburgers and hotdogs and having salads in addition to chips, pretzels, cupcakes, cake, etc. I am making a corn salad and a pasta salad. The salads call for fresh veggies, but I know they may get expensive since I am cooking for 30 people. I was wondering if you think I could use frozen corn & brocolli and canned diced tomatoes vs using fresh. Once the food is all cooked and chilled for the salads I don't think anyone will be able to tell if it is fresh or frozen. What do you think? Does it really matter? Thanks for your thoughts in advance.

    I would do frozen corn and brocoli. No one will know the difference. While I don't think it matters that much, I would use fresh tomatoes only bc I know that some people can tell the difference. I am sure it isn't a big deal though. Remember you are having 30 people over but 30 people are not all going to have the salads. I usually do half the salad for the amount of people coming. So in your case I would do 15 servings for each salad to avoid excess.
  • Do you really think 15 servings of each would be enough? I am so worried of not having enough food. I agree with you on not wanting to have excess food. There will be 20 adults, 2 babies, and 9 kids ages ranging from 4 -15. Four of the familes invited (8 adults and 7 kids) have canceled last minute on us in the past or just not shown up. Now that I see it written out I think you are right.

    How many hamburgers and hot dogs should I get?

    The corn salad recipie makes 10, 1/2 cup servings so I was going to triple it and the pasta salad recipie makes 14, 3/4 cup servings so I was going to double it. I am also making fruit salad. Maybe I'll just make 1 batch of the pasta salad and 1 1/2 batches of corn salad. I was thinking the same thing about the canned tomatoes.

    Thanks for your help. If anyone has anything else feel free to tell me. I can cook and bake, but when it comes to knowing how much food to serve I freak out.

    I agree this is plenty of salad.  You figure the kids probably won't eat much of a salad.  I would make one batch of fruit salad.

    If you invited 30 people, I would do 25 burgers and 25 hotdogs, because most people eat 2. Plus, those can be frozen on what you don't use.  I wouldn't cook them all at once, but have them on hand. Same with buns.  

    I don't mind helping. I love to entertain. Now if I can only get people up here to visit.

  • I love entertaining too.  Unfortunately, the grill is in the garage until I can get a gas line run.

    I usually make all the hot dogs and hamburgers and then have what people don't eat as leftovers for the week.
