  • Monday: I'm making fresh pesto, so I'll probably htrow that on some pasta with some cherry tomatoes and maybe chicken.

    Tuesday: Wine night is Tuesday this week, so out.

    Wednesday: Going to see Char with my mom and my sister, so out again.

    Thursday: Chicken, maybe on the grill. 

    Friday: Who knows, depends on where we end up for the fourth.

  • Yesterday: Filet Mignon; cole slaw; Salad; potatoes and Rhubarb pie

    Monday:  Baked Polenta with Sausage and Artichoke Hearts

    Tuesday: No cooking.  I will be out and about.

    Wednesday: Spicy Mustard Shrimp with Grilled Zucchini and Orzo Salad

    Thursday: Mushroom Swiss Turkey Burgers

    Friday: Don't know yet.

  • I have been on vacation for two weeks, and have gained back the 10 lbs it took me 3 months to lose. This week I'm planning on pulling a very hungry caterpillar and eating my way through one nice, green leaf until I feel much better.

  • I, too, am back from spending a week at my mom's in California, and feel like I have gained at least 5 lbs, so we will be eating healthy all week... or at least trying to. 

    Monday- Pork Tenderloin, Kale Salad, baked potatoes
    Tuesday- Chicken.. some kind, I'm not sure yet.  Suggestions? with Corn and Watermelon or salad.
    Wednesday- Tri-tip... sandwiches or just alone with some kind of sides.
    Thursday- ? We may be heading to our cabin for the weekend, so possibly eating out.
    Friday- ?

    I have no idea what MH is planning on making this week but I'd like to point out that today is Canada Day for our friends up north.  :)

  • I picked a dozen yellow summer squash and 6 zucchini from our garden this weekend...

    Monday : Zucchini Noodles and meatballs

    Tuesday : sauteed chicken, squash, mushrooms, and tomatoes

    Wednesday : spaghetti squash casserole with zucchini bread for dessert

    Thursday : roast chicken with squash fritter and mashed cauliflower

    Friday : Not a clue.  It depends on if my husband is working the concert/fireworks show in DC or not.  If he is, I might have friends over and cookout.  Or I'll go and watch the show and bring a sandwich with me, though that's really too many people for me.

    I saw a recipe for Baked Parmesan Breaded Squash that looked yummy to try... thought I would share!

  • I only have a few meals scheduled this week, we'll make up the rest as we go.  Yesterday we had ribeye paninis that were so yummy.  The rest of the week is homemade "hamburger helper" and broccoli, chili rubbed chicken with sweet potato and spinach hash, and probably something with eggs (omelets?).  We're also heading to a cookout on the 4th.

  • Monday: Shredded Salsa Chicken Tacos with fresh cilantro from my garden. Yum!

    Tuesday: Leftovers

    Wednesday: Spinach & Ricotta Tortelloni with Fresh Basil Marinara. Caprese Salad. My basil is in danger of being destroyed by Japanese beetles, so I am using it up. :)

    Thursday: Leftovers or grilled pork chops with grilled potato packets (thinly sliced Russet potatoes, onions, green peppers, a little butter) and veggie pasta salad

    Friday: At a BBQ, so probably hot dogs, burgers, etc. I am making a Southwest pasta salad (bowtie pasta, ranch dressing, mayo, taco seasoning, with chopped tomatoes, black beans, corn, and a metric ton of cilantro from my garden).
