So, we've been back from our quick trip to Long Island for a week now, and DH had to leave the country on Wednesday for an emergency back in Ireland, so I'm solo parenting for another 5 days. I'm trying really hard to cook kid-friendly meals and not waste money, due to new house, vacation, unexpected trip, a week unpaid from work for DH... *waving the white flag* I'm tired.

Wednesday: mac n' cheese, sweet carrots

Thursday: ground chicken tacos

Friday: chicken nuggets and corn

Saturday: spaghetti and meatballs

Sunday: meatballs and green beans

Monday: ordering pizza due to busy schedule today (including finishing cleaning the rental house tonight, sigh)

Tuesday: hot dogs, oven fries, peas

Wednesday: toasted sandwiches, apple slices or a fruit salad

Thursday: no idea (any ideas, please?)

Friday the 4th: DH flies home in the late afternoon - probably take-out as we'll both be too exhausted to cook

Saturday: grilled burgers, redskin potato salad, corn on the cob

Sunday: porkloin, mashed potatoes

    Thursday-orechiette with sausage and tomato
    Friday-gyros and ice cream from the newer ice cream place up the road from us.
    Sunday-Sunday Chicken from Cracker Barrel
    Monday-hibachi chicken with TJ japanese fried rice
    Tuesday-Grilled pork chops with veggie yet to be determined
    Wednesday-Tacos
    Thursday-Rotisserie Chicken with Crunchy Asian Ramen Noodle Salad
    Friday-Pulled Pork or burgers, potato salad, corn

    Monday- marinated chicken on the grill with peppers and mushrooms, sweet potatoes
    tuesday- ranch burgers,  oven fries, salad
    Wednesday- Tilapia, corn on the cob, salad
    Thursday- chicken of some sort with some sort of side
    Friday- picnic
     
  • Other than roast chicken today, I have ZERO idea on what we're eating. 

    Clare, after the week you're having, for your mystery Thursday, I'd do breakfast for dinner, as in cold cereal.

    Hope all is well with your hubby and that the time goes quickly for you.

  • My plan this week is to scrape up a few dinners with the food that's in our house currently.  Have picnic food on Friday.  And eat out on Saturday.  We leave for the beach on Sunday.   I think your plan should be about the same Clare - just fix whatever is easy/quick/in the house, even if that means frozen waffles!

    And cold cereal dinner is something the kids would like bc it's so out of the ordinary - good thinking!!

    i have the cookbook at home, I will post it tonight. We were obsessed with Top Secret Recipes in grad school but it was free then I didn't realize you now have to pay.

    Its not bad, the book I have has recipes for Benihana's (hibachi chicken/steak, fried rice, sauces), Chi-Chi's, Cracker Barrel, Cheesecake Factory.

    I totally forgot the book on my counter this morning! I will bring it tomorrow.

    Tuesday - Crockpot Italian Chicken over rice

    Wednesday - Chili

    Thursday - Chicken parm and pasta

    Friday - Cookout, typical stuff

    Saturday - left overs

    Sunday - Not sure

    Sunday - Panera
    Monday - grilled chicken salads
    Tuesday - trying aldi's new fit and active turkey tenderloin (featured in this week's circular) with either salad or a frozen veggie medley
    Wed - Mac and cheese with peas
    Thurs - either going out for happy hour food at the bar or eating the rest of the turkey tenderloin
    Fri - going to a cookout.  I will make pasta salad.
    Sat and Sun visiting the in laws and getting fed :)
    Monday - chicken with rice, green beans and mushrooms aka chicken continental
    Tuesday - probably going out with a birthday coupon, maybe Houlihan's 
    Wed - using DH's big burrito birthday coupon at Eleven
