So now that Summer is winding down (this one was a fast one, wasn't it?!), is everyone starting to get back into a more structured schedule, including planned dinners? I'm trying hard at getting back on track.
Friday: Ordered in pizza
Saturday: DH surprised me the magical words, "Dinner out!" and so we enjoy the Outback
Sunday: Val's Spicy Baked Shrimp, served over thin spaghetti (I did NOT use 3/4-lb of butter, which may be why it could have been saucier, but it was really, really good and a big hit. I only used a 1-lb bag of frozen shrimp, boiled of course, and then omitted the garlic and chili powder due to personal tastes.)
Monday: BLTs with the extra bacon from Sunday's dinner (rather than freezing it)
Tuesday: Chicken nuggets and fries for the boys, crab-stuffed salmon and vegetable-stuffed pepper for DH and I (a local grocery store down here had them in their fresh fish section and it just looked really good!)
Wednesday: Beef and Cheddar Casserole and some veggie
Thursday: cheeseburgers on the grill or hot dogs, I figure
Friday: take-out (Pizza)
Saturday: Queso fredo chicken with spanish rice
