  • I don't have it planned by night, but I've left instructions for my chef (aka MH) to make the following for me this week:

    taterless (cauliflower) tater-tot casserole 
    quinoa and chicken casserole
    garlic and tortellini soup
    chicken and rice bake
    spaghetti squash w/ turkey and tomato sauce

  • You know in books where people are inundated with food after a death in family???  Yeah, that doesn't happen in real life.  I WISH it did.  I haven't cooked in 3 weeks.  Blah.

  • Sunday - black bean enchiladas
    Monday - BLTs with the last of this years farmers market heirloom tomatoes
    Tuesday - tacos 
    Wednesday - baked tilapia, baked potatoes and roasted broccoli
    Thursday - spaghetti and salad
    Friday - takeout 
    Saturday - likely leftovers as H will be at work

    Tuesday: Cilantro Lime Rice and Cilantro lime chicken tacos

    Wednesday: Wine night = out!

    Thursday: I dunno, maybe something easy like Spaghetti. 

    Friday: Book club, so out again!

    Tuesday : Pumpkin chili with cornbread

    Wednesday : sauerkraut and kielbasa in the crockpot

    Thursday : Buffalo chicken wings

    Friday : lettuce wrapped fajitas

  • Mon- "Tuna macaroni". It's just pasta salad but my baby sister called it that when we were younger so it's stuck lol.

    Tues- Chicken (and black bean) taco chili on rice

    Wed- Roasted lemon pepper chicken breasts, baked sweet potatoes, steamed green beans 

    Thurs- I'm going to try making spaghetti with this weird squash ("spaghetti squash") that my friend used once. It tasted pretty good so hopefully I can replicate it.

    Fri- Canning homemade salsa and pickles all day with my sisters, SIL, and MIL, so probably pizza and breadsticks

    I'm making this too, but for my first time. Have you made this before? What method did you use?

  • @booknerd226 Spaghetti squash is awesome.  http://lowcarbdiets.about.com/od/cooking/a/spagsquash.htm  There's a list of all the different ways of cooking it up.
    Be aware, it's a pain to cut through.

    I'm a "stab it repeatedly and mike it" kind of girl. It is pretty tasty and super cheap at the farmers markets.
    I'm making pasta with a pumpkin tomato sauce tonight, leftovers tomorrow, and a chicken/green bean/ potato bake Thursday.

    I'm making this too, but for my first time. Have you made this before? What method did you use?
    @booknerd226 - We make it all the time. It's a staple. 

    I just cut the squash in half, take out the seeds and guts, and then bake it (cut side down) in a shallow pan for about 45 minutes at 375. You know it's done because the skin will start to turn a bit brown and go a bit soft.

    I tried the microwave method and will never do it again. It took forever (WAY longer than the internet told me it would) and was really inconvenient.

    @booknerd226 - Ya, I generally throw a little water in the bottom of the pan. Not much, just enough to steam a bit.
