Butternut Squash & Pear Soup
The weather is turning chilly here in upstate NY. Finally time for soups and stews. I wanted to share one of my favorite soup recipes
Serves 8-10
4 Tbsp (1/2 stick) butter
2 large onions, diced
1 medium butternut squash- peeled, seeded & cut into chunks
3-4 medium pears, peeled and diced
1 qt chicken or vegetable broth
2 rosemary sprigs ( i just use a few sprinkles of dried rosemary)
1/2 cup heavy cream
salt, pepper and sugar, to taste
Heat butter in a large pot over medium heat til melted and bubbling. Add onions and cook til soft and translucent. Add squash and pears, cook 5 mins. Add broth. Ingredients should be submerged in liquid, if not add some water to cover. Add rosemary, bring to a simmer and cook til veggies are tender, about 30-45 mins. Remove from heat, add cream and puree in pot until smooth. Season with salt, pepper and sugar to your liking.
