s/o Menu Monday - most recent amazing recipe find?

What was your most recent amazing recipe find? Savory or sweet, snack or meal... I want them all!

Re: s/o Menu Monday - most recent amazing recipe find?

  • I've been trying to use my crockpot more.  I found a balsamic pork crockpot recipe that's really good.

    http://addapinch.com/cooking/balsamic-pork-tenderloin-recipe/

  • Snack!
    Maple Popcorn
I also preheat the oven to 300 and then bake the popcorn for 20 minutes.  It's like caramel popcorn, but better.

  • S/O that.  What kind of meats does everyone cook in their crock pots that don't need to come out like shredded beef, pork, chicken?  Everything comes out of my crock pot dry.  I have one that has a timer, but by the time that 6-8 hours is up, I still don't get home for a few more hours and even on warm it seems to kill the meat.  I'm just about to give up on any meat coming out good.

  • The most recent winning new recipe was Pioneer Woman's Pepperoni Pizza Burgers.  Even I liked these and I don't usually like anything but turkey and veggie burgers.

Get a new crock pot.  :)

I do pork tenderloin and slice it.  Or boneless, skinless chicken breasts.

  • LOVE this White Chicken Chili.  I've been playing with it to make it less spicy (for DD) but haven't found a good combo yet.

I did! I bought one off of people's recommendations here!  It's infinitely better than the one I had, but things still aren't right.  I just wonder if anything in a crock pot for for longer than 8 hours is just too dry, even if it's only on warm for anything longer than cooking time.

That's why my DH HAAAAAAATES crock pot meals.  I don't have a solution, I just don't cook in the crock pot a lot.  It's all about quick weeknight meals for us.

Do you add any liquid to it when you cook?  I do pork roasts, beef roasts, chicken breasts, a whole chicken, and shredded meat.  They're never dry.  I have to cook it on low even though it says to cook on high because my crockpot runs hot.  Even warm is hot.   I always add chicken or beef broth to pretty much any meat I cook whether the recipe calls for it or not.  Usually at least 1/2 a can.  It doesn't always cook down but I just lift the meat out and leave the broth behind.  My crockpot is very basic.  No timers or anything.  I usually have my husband start it because he leaves the house later than I do.

Up the amount of liquid in it.  Maybe it's evaporating too quickly.

Most of my recipes call for submerging it in liquid.  And oddly, some of the better ones have been when there is less liquid!

I'll try that.  However, most of the time the crock pot still has all the liquid left!

The only thing that worked for me was to go back to using a really old crockpot. I got new fancy ones, new basic ones...no modern crockpot worked. I now use a 25 year old stained crock pot and everything comes out just fine. Hit up a Goodwill or second hand shop!

Or try leaving the bone in for chicken breasts.  If it's shredding, it's uber tender.  The bone will prevent it from getting all over the place.  What about doing bone in pork chops?  Or changing the temp/time at which you cook?

And maybe try a bone in ham.  That should come out nice and tender.  And in one piece, relatively speaking.

Hmm, a ham might be worth trying.  I've tried shortening the time, but it still not quite right.  It's worth experimenting more though.  I just love the ease of using the crock pot!
