    I am trying to clean out the pantry this week, so red beans and rice, lentil soup and pasta are on the menu.  I wish I liked cooking more :(

  • We actually made (and are sticking to) a meal plan this week!  Plus, we have SO much meat in our freezer.

    Monday: Pork tenderloin, rice, Brussels sprouts
    Tuesday: Thai beef
    Wednesday: DH is teaching cadets and I have to cook for myself so it's eggs, ham breakfast strips (aka fake bacon), and cauliflower in the Actifry
    Thursday: Slow-cooker chicken tacos 
    Friday: We're going out. A safe bet for me will be duck; I always order duck if it's on a menu. :)
    Saturday: Steak and sweet potato fries

  • Meal planning for a week and then going on vacation for a week means lots of leftovers.

    On Sunday, I made Cheesy Vegetarian Brown Rice Casserole with Broccoli and Mushrooms. I think tonight will be its last night. I'll make chicken breasts, rice, and broccoli for tomorrow with enough for DH on Friday (I'm going to happy hour with some friends).

    We're leaving Saturday early afternoon for Florida. :)

  • Sunday was Worlds Best Lasagna
    Last night was a pork roast with a random rub we had, cooked in the crockpot.  Then garlic and herb potatoes, and peas.
    Tonight will be leftovers since we have a meeting right after work.
    Tomorrow will be Ham & Cheese Gnocci
    Friday is Fiesta Mac n Cheese in the crockpot.

  • My dinners are a joke this week since I'm staying in a hotel with a microwave and fridge until Friday (lo-fat cottage cheese, ref beans, pico de gallo, and tortilla chips with ginger snaps for dessert)... But, @lfk2013, I would LOVE for you to share the recipe for the vegetarian brown rice casserole!

    I highly recommend trying to find the mushroom base. I found it at Harris Teeter...but I'm not sure what stores they have out there.

    DH even liked this...and it has no meat.

  • Monday - leftovers and soup because DH wasn't feeling great

    Tuesday - Pizza roll muffins (delicious but definitely not healthy - holy carb load)

    Tonight - hamburgers

    Tomorrow - something quick and simple since DH is at work - aka probably a bowl of cereal

    Friday - chicken and rice

    We're pretty boring in this house. :)
