Menu Monday Anyone?

I was thinking that we should start an additional Monday tradition - Menu Monday.  A place were we can post our menus for the week.  Or for those of us that don't plan, we can recipe that we want to try or have tried.  What do you think?

PS - If anyone wants to be in charge of any of the daily posts, let me know. :)

    I don't meal plan but I am trying to at least think ahead a little. Tonight I am planning comfort food for the snow storm. I found a copycat Panera Mac & Cheese recipe that I am going to try. I also made chicken stock last night for soup this week. I used the chicken bones from a rotisserie chicken that I got last night to make enchiladas.

  • Sounds like an interesting idea. I am not much of a meal planner but maybe this will help stir up some ideas.

    I know tonight we're either doing chicken parmesan or chicken tacos. (Take a wild guess which ingredient I stocked up on over the weekend)

    Week of January 26th-Monday-  lasagna soup
    Tuesday- I'm on my own, H has a work reception. Probably gonna make a breakfast food scramble.
    Wednesday- shrimp fajita pasta (½ recipe)
    Thursday- italian sausages, roasted carrots, roasted potatoes
    Friday- Out for Step-bro's Bday
    Saturday- homemade pizzas, carrots
    Sunday-  5:30 Super Bowl Party

  • I'm in!! I usually have a plan, but I haven't really planned this week. We've had a lot of leftovers. lol

  • Normally, I'd be all over this one but sadly my broken foot is making cooking a challenge.

    This week is all about simple things that I can either cook on one foot or that H can make. I did make a huge vat of soup this weekend (I chopped all the veggies while I sat on a stool in the kitchen). I also roasted 2 1/2 sheet trays of veggies that should last us for quite a few meals.

    Sat: Pad Thai - H made this one
    Sun: Minestrone soup
    Mon: Leftovers
    Tues: Whatever H can come up with on his day off LOL
    Wed: Leftovers
    Thurs: Leftovers
    Fri: Panera?

    Tomorrow - not sure...the hubby will be in charge tomorrow. I have PD until 6:30 tomorrow.
    Wednesday - salmon and veggies

    Sunday - cheat day for Superbowl! pizza and wings.

  • @minionlover I am a huge enchilada fan. I've never attempted to make them, but that recipe will be made in the next weekend or 2.  I almost ate the computer looking at the recipe (I may or may not have been hungry when I looked at it)

    @brainybrunette We had Panera yesterday for lunch and I had tomato soup in a break bowl.  I am still craving it!  So delicious!!

    I don't normally meal plan, but because of this weather lately, I need to be prepared.

    Last night was chicken pot pie.  They were so delicious, I wish I would have made 2 per person.

    Tonight we had crock pot chili.  We forgot to get garlic and every store was sold out of beef stock, we needed to use bullion.  It didn't take right, but still delicious.

    Tomorrow is some kind of Asian pork in the crock pot.  I am really excited to try it and will share the recipe if we like it.  Once again, we don't have garlic so that will be missing.

    I didn't plan for Wednesday-Saturday, but am already thinking of the Super Bowl.  In preliminary planning, we may make sausage bread.  H's mom makes pepperoni bread, but we just had it, so I may just switch the filling, same recipe.  I also may make Buffalo chicken spring rolls.  @minionlover's enchiladas are also a contender.
  • I decided to change up my menu this week.

    Tonight we are having beef and veggie stir fry over rice!  It's super easy to make:
    1. brown beef (I used stewing beef cubes, but have also tried steak strips or chicken) in a large pan
    2. add one diced onion and seasonings: teaspoon garlic, 1/2 teaspoon ginger, 1 teaspoon red pepper flakes and 2 tablespoons honey or maple syrup
    3. when meat is almost cooked all the way through, add one chopped green pepper, one chopped carrot, one head chopped broccoli and three dices white mushrooms
    4. Continue cooking until meat is done and serve over rice
    Note: I added some water to the pan with the beef.
