    Tuesday: mac and cheese
    Wednesday: soup of some kind
    Thursday: not sure, since we will be spending the evening in box seats at a hockey game
    Friday: Cornish game hen, ham, mashed potatoes, glazed carrots and stuffing for D's birthday
    Saturday: leftovers
    Sunday: leftovers

    T/W - Tortellini bake with salad (boil 2 lbs tortellini, mix with 2 jars alfredo, 1 jar marinara, top with cheese, bake 350 for 20 mins.  #nothealthydontcare)

    Th - canned soup with grilled cheese unless parents cook something

  • I am making baked potato soup today. I saved the potato insides from making potato skins yesterday. I think that I am going to take a pork roast out for tomorrow and make the recipe below. That's all I got planned as of now.

  • I'm not sure which days we'll do what, but these are the foods I have planned:

    Honey Sriracha chicken with cauliflower fried "rice" You pretty much blend the cauliflower until it looks like rice and make it like you would regular fried rice! I'm excited to try.

    Lemon dill salmon (melt a little butter, add in some garlic and dill, pour it over salmon in a baking dish and bake at 350 for 25ish minutes) with brown sugar & bacon green beans, cooked carrots

    Crockpot Cashew Chicken - I'm adding mushrooms!

    Week of February 2nd-
    Monday-  chicken enchilada casserole (7:30 Kickball)
    Tuesday- white chicken chili
    Wednesday- turkey tenderloin, roasted carrots, roasted potatoes
    Thursday- chicken tenders, roasted sweet potatoes, roasted brussels sprouts
    Friday- turkey tacos
    Saturday-  beef stroganoff  (½ recipe)
    Sunday-  crockpot turkey chili

    When I roast vegetables, I use Wegman's Basting Oil or a flavored blend from D'Avolio. Just peel/chop whatever veggies you want, toss in oil with some seasonings, and roast at 450 for 20-30min, flipping once. So easy, so good.
  • @xxjen015 we kind of do that same thing with salmon except we wrap it in parchment paper and it steams itself, so we don't have to add butter.

  • Oh boy. I had some awesome ideas this week, but I've just been thrown a curveball. 

    I've decided to eliminate all eggs (including baked) in my diet to try to get J's eczema under better control. 

    So, I've only got a few ideas. 

    Tonight will be what I call Mexican layer casserole. Spanish rice (I make this one http://allrecipes.com/recipe/best-spanish-rice/), taco meat (we use soy based since I don't eat meat, only fish), black beans, onions, corn, topped with cheese.

    We will also throw in a meal of parmesan baked tilapia, roasted potatoes and roasted broccoli

  • Only definite meal plan for this week is Wednesday. Since it's H's birthday, I'm doing homemade tacos, Spanish rice and baked Churros.

    @minionlover your enchilada recipe won as our Super Bowl meal yesterday.  They were delicious!  I hate onions and H cut too many, so I will definitely cut the onions out the next time. 

    The only planned meal for the week are tonight, crock pot French dips.  We made them a few months ago and they are tasty.  http://allrecipes.com/recipe/easy-slow-cooker-french-dip/

    I will edit and update as I decide on more meals for the week.
  • Our meal plan goes Sat-Fri. I do a big cook-up on the weekend because I don't have time during the week

    Sat: taco night. I use ground chicken, make my own spice mix, and use Garden of Eatin taco shells.

    Sun: mushroom and barley soup (it's a recipe from a williams-Sonoma soup cookbook, I think you can find it online too)

    Mon: leftovers or trader joes mandarin orange chicken with rice (taking the easy way out, it's hard to cook too much in 1 foot lol)

    Tues: see Mon

    We'd: I have an appointment to follow up with ortho. I'm hoping we'll be celebrating that I cannortial weight bear and go out to eat! If not, leftovers (that was depressing)

    Thurs: see mon

    Fri: panera. It's our weekly thing.

  • H cooked a HUGE pot of chili yesterday so we had that last night and tonigh. I made a big bag of quinoa and all kinds of goodies to it so I'm sure that will be a night or two . I may try a cilantro lime chicken in the crockpot and serve over rice.
  • I am glad you like the recipe @sjs1013.  It is on my make again soon list.

    I want to add that I think that I am going to make Toasted Angel Hair with Sausage & Peppers tonight.  I cooked and froze a bunch of bulk sausage and this is a great way to use it.

  • @minionlover I like that angel hair recipe.  That may get tested later this week.

    Tonight we are eating leftovers from our French dips.  Tomorrow will be meatloaf, corn and mac and cheese (Kraft from a box).
  • So I had to share this awesome nugget from tonight's dinner... H is the primary chef in our household and seems to excel when it comes to anything involving dough--breads, pizzas, etc. Last year for our anniversary, I got him a copy of the book "The Bread Bible", which he proceeded to briefly skim and never touch again...till tonight.

    I knew he was in a mood to want to make pizza this week. We stocked up on all the ingredients over the weekend before coming home to watch the super bowl. I was a bit surprised coming home from work and seeing the book cracked open to the pizza dough section since he's usually sticking to one particular recipe in particular. 

    So, I figured I'd share a digitalized version of said recipe since it turned out surprisingly good:
