    Tuesday: Chicken and Biscuits, carrots, and corn

    Wed: Out

    Thursday: Roasted Red Pepper Ravioli with Chardonnay Cream sauce and green beans with garlic and red pepper flakes

    Friday: Baked Rigatoni, garlic bread

    It's a carb-loaded week. Trying to use up stuff before we go on vacation.

    Bonus: I love the peeled garlic cloves from Costco - you get a TON of them for 6 bucks. I freeze them and then I can just pull out however many cloves I need. They last forever. You can even make your own garlic powder out of them if you have a food dehydrator.

  • Monday: Fish Tacos w/ Cilantro-Lime Slaw

    Tuesday: Maybe ham & cheese sliders with soup of some sort. I have a conference call for work from 5:00 - 7:00. Boo!

    Wednesday: Grilled Pork chops, Garlic Mashed Potatoes, Salad

    Thursday: Leftovers

    Friday: Crockpot Beef Stroganoff

    When I am actually motivated, I like to prep as much as I can on Sunday. It saves a ton of time during the week. I also like to make double batches of meals like ziti, chili, certain casseroles and freeze half of it. If it would normally cook in a 9x13, I use (2) 8x8s and freeze one.

  • I don't generally menu plan, but tonight I'm going to try to make Doro Wat and hope my husband doesn't kill me (he's not a fan of Ethiopian food). It is also a long process but if I start as soon as I get home it should be done in time for a later dinner. http://www.daringgourmet.com/2013/08/27/doro-wat-spicy-ethiopian-chicken-stew/

    The closest thing to shortcuts I use is a mini chopper to chop garlic (mostly) and other thing. It's so easy:

  • Tonight I am trying out a breaded pork chops recipe
    I don't have exact days planned but we will have:
    Chicken with pepperoni marinara
    Scalloped potatoes and ham
    Crockpot whole chicken
    French toast and sausage
    Saturday we have reservations at a local italian restaurant
