T&Ps, and a dinner

A very close friend has a baby 4 days younger than E.  He is currently in the hospital, and will be for a while.  I think it started with breathing issues, and now he's on a breathing tube, feeding tube etc.  His fever finally broke, but he'll be there for at least a week.  It's seriously heartbreaking.  If you can send up some T&Ps, please do.

 

I offered to watch her older 2 kids this weekend.  She might need help with the middle kid (2), so her and her H can both be at the hospital.  I also want make a dinner.  Any go-to dinners that are easy for me to make/ reheats easy?  I was thinking the go-to baked ziti, but if you have any other ideas, please share!

  • Oh my, lots of T&P for her family! 

    I've had good luck sending this:

    Slow Cooker Chicken Fajitas 

    Yields: One gallon-sized bag of Chicken Fajitas 
    Ingredients • 1 medium-sized green pepper, sliced • 1 medium-sized red pepper, sliced • 1 small yellow onion, peeled and sliced • 2 large cloves of garlic, minced • 1 tablespoon honey • The juice from one lime • 1 tablespoon chili powder • 2 teaspoons cumin • 1 teaspoon paprika • 1/4 teaspoon crushed red pepper flakes • 1 pound boneless, skinless chicken breasts, sliced 

    Thaw the night before in the refrigerator from frozen. 

    Cook in crockpot on low for 4-8 hours. 

    Serve with tortillas and other fajita toppings (cheese, lettuce, salsa, sour cream, guacamole)

    I really love sending food that can be refrigerated or frozen and dropped in the crockpot.

  • Definitely praying for your friend and her baby boy.  

    This Mexican "Lasagna" is easy and I love it reheated. http://www.foodnetwork.com/recipes/rachael-ray/mexican-lasagna-recipe.html  It's one of Rachel Ray's 30 minute meals, so it's pretty easy.  I use ground beef instead of chicken, but you could obviously use whatever.

  • Thinking of your friend and that sweet baby.

    You could do eggplant parm or chicken parm. Comforting and they would just need to throw it in the oven. That's my go to comfort food.

  • She's kind of picky, so I might do the chicken parm idea.  The others I'm writing down to make for us.  My weakness is Mexican! They found out he has mrsa in his lungs. They moved to an aggressive breathing treatment. An infant his age with this infection is 20-40% mortality rate. They need all the thoughts and prayers they can get.
