monday meal planning

What's for dinner this week?

Monday: bean salad and tuna burgers
Tuesday: soup of some kind
Wednesday: acorn squash and red pepper soup
Thursday: fish and sweet potato fries
Friday: leftovers
Saturday:?? we will be going grocery shopping
Sunday: likely a soup

We are trying to use up leftover ingredients before we go grocery shopping on the weekend, hence the plethora of soup!

Re: monday meal planning

  • Ahh we were so busy celebrating DH's 30th I didn't even grocery shop this weekend. I need to check out the sales here online and then post my meals for the week. I got a veggie spiralizer so I'm probably going to have zucchini "pasta" at least one day this week.

  • H has been pushing me to do meal planning, so since I'm tired of him b*tching about about, I'm gonna try to get on board with this.

    Monday - eating out and going grocery shopping
    Tuesday - Garlic Parm Chicken (repinned from @WillyH19) with pesto pasta
    Wednesday - Honey Garlic Pork Chops with white rice and green beans
    Thursday - Turkey Meatloaf with red potatoes and broccoli
    Friday - eating out with family from OOT
    Saturday - Baby Shower food

  • Evan - I love my spiralizer!  I can't wait for summer to use it again!!!!  I'm not a fan of the zucchini right now.  I was going to try sweet potatoes... maybe I still will.

    Monday - Leftover Chicken Parm

    Tue/Wed - short ribs with mac and cheese and veggies

    Thurs/Fri - Brunzwich soup (I think it's called)

  • Lime cilantro chicken with garlic parmesan zucchini noodles and mango salsa for the next few nights.

    Asian-glazed pork chops with salad and sweet potatoes one or two nights.

    My parents cook one night.

    Friday or Saturday we go out to dinner.

  • I still have to head out to Pinterest to get some recipes for the week.  I can't wait for the weather to warm up to use the grill.  I have found so many grilling recipes but don't want to go outside.

    And speaking of spiralizers, I am dying for one.  I am not really sure why.  I just love kitchen gadgets.  I found this one, clicky, that is now on my want list.

    Week of March 1st-Monday-  turkey tacos
    Tuesday- lasagna soup & garlic bread
    Wednesday- out to dinner w/ MIL
    Thursday- jalapeno popper chicken, yellow rice
    Friday- out of town visiting college friends
    Saturday- out of town visiting college friends
    Sunday-  coming back from being out of town... take out?
  • Tonight - cracker barrel. I was going to make Salmon en croute, but my basil molded. I'm having trouble so I broke down over that. :-/
    Tomorrow - veggie patties
    Wednesday - crockpot general tso's chicken
    Thursday - pick something up or leftovers. I have parent-teacher conferences until 6:30 so I'm not cooking.
    Friday - leftovers
    Saturday - dinner in Atlanta before WICKED!!!!!!

  • @xxjen015 please share the crock pot General Tso's recipe.  I love General Tso's and so does my H.

    Sunday- London broil and baked sweet potatoes.
    Monday- Chicken fajitas and white rice.
    Tuesday- Chicken cutlets, broccoli and either corn or spinach, I'm undecided.
    Wednesday- Possibly cheeseburgers and tater tots.
    Thursday- who knows
    Friday- I am looking for something meat free.  I am bored of pizza on Fridays and last Friday we didn't know what we wanted, so we ordered food late and waited almost an hour.
    Saturday- I can't think that far ahead.
  • Today was taco night.

    Tomorrow is pizza since it'll be our first day back to work. (I'm also excited too. There's one day a month where H is on the road all day. I use this opportunity to go get lunch from a local Japanese restaurant since H is allergic to their food)

    Not sure for the rest of the week. We at least have a decent selection to choose from as a result of us going grocery shopping over the weekend.

  • @minionlover I used my Paderno spiralizer last night for the first time and I'm obsessed!!!!!  I highly recommend it, it's so worth the $40.  One of my new years resolutions was to eat more vegetables and I think this will really help with that.

    I'm adding this to my wish list. I have a handheld one, but you have to cut the veggies to fit in the cone. Now I know I love it I might splurge for this!

  • @sjs1013, @willy1020, @minionlover It was really, really good! I used 2 chicken breasts instead of 3 and halved the cornstarch. When I had 1.5 hours left I added in some green beans and mushrooms along with a 1/4 cup water...it felt a bit dry to me. That seemed to do well! It was definitely hot, but in a good way. I'm usually a weenie but I've been trying more spicy foods. It was a nice heat!
