  • Week of March 8th-Monday-  yumasetta (its a creamy beef & egg noodle dish)
    Tuesday- pepperoni pizza roll-ups
Wednesday- white chicken chili, cornbread muffins
Thursday- dinner date for local restaurant week
Friday- mac & cheese, roasted brussels sprouts, roasted carrots
Saturday- hubs is going to his sister's for corned beef & cabbage, I'm undecided as it's girl's night at gay bingo
    Sunday-  meatloaf, mashed potatoes, veggies
  • This week's menu includes:

Naan pizzas - tomatoes, fresh mozzarella, and basil on naan bread. It makes a great thin crust personal pizza.

    Tortellini soup

Veggie sandwiches - grilled (indoor grill pan) veggies, caramelized red onions, baby arugula, and ricotta cheese on a panino.

I made most of this over the weekend (caramelized onions and veggies are ready to heat up in the fridge, naan pizzas just are super quick and can easily be assembled). There's also enough for leftovers of all of this.

  • Monday we had chicken cutlets, Stovetop stuffing and broccoli.

    Tuesday- Pepper steak and rice.

    Wednesday- Possibly sausage and peppers.

    Thursday- Tacos?

Friday- I am in search of a new meatless pasta dish.  If I find something good, I will share.

Saturday- Hopefully @xxjen015 's crock pot General Tso's chicken

    Sunday- Roasted chicken and veggies
  • Anyone else plan meals all week and it never goes like you plan? I try to guess how many leftover days we have and I either have too much or not enough. Or my parents want to make something (which is great, but let me know people!). I guess it annoys me because I don't like my meat sitting all week in the refrigerator... Then I feel like I'm freezing only to thaw it in a few days.

  • @sjs1013 : we like to make a Pasta dish with sautéed veggies. We boil pasta, usually spaghetti, and sauté some peppers, carrots, green beans, etc. Then we coat the pasta with some oil and add the veggies. I usually throw some black pepper on my serving.

  • @ilovecatsandknitting thanks for the suggestion!  I am really picky and I don't eat most veggies, so that won't work for me.  H eats pretty much anything, so it would be fine for him.  He also isn't Catholic, so he doesn't need to worry about abstaining from meat.  I usually make him a meat side dish.
