Hoppy Easter!

Do you have big plans for the weekend?  Any fun Easter traditions?

DH and I had my family staying with us for the last two weeks, so we will try to do a whole bunch of nothing this weekend!

Tomorrow and Friday are holidays for us, and Monday we have to move out of our house for a week to get some flooring done.  So, we will have to do a bit of packing and meal prep (our hotel room has a full kitchen).

  • DH is having a game night with some guys at our house. I may give myself a pedicure.

We're both off tomorrow, doing lots of BR stuff.

Saturday I'm hoping to get some stuff done outside before we go out to dinner and hang out with some friends.

Sunday I'll make key lime pie, biscuits, and deviled eggs to bring to my SIL's for Easter dinner.

  • We're both working tomorrow, but my sister is coming to visit this weekend, so I'll be going out for drinks with her tomorrow night. Sunday we'll be going to my IL's for dinner, and that's about it. No traditions, we're not religious, so Easter is just a good excust to get together and eat ham.

  • Usually we have brunch with my parents...but they don't get back until Saturday evening from California, so I have no idea of plans.

We'll probably end up packing all weekend. My least-favorite part of moving...

  • DH and I have tomorrow off. But this weekend will really be me resting (BR since my doctor doesn't want me to do a whole lot) and working on spring cleaning. We'll go to church on Sunday and out to lunch. Since family is so far away, we don't have any traditions that we do here. We were supposed to go on a long weekend, but that got cancelled with my hospital visit.

  • We always spend Easter Sunday at my parents house, starting with breakfast.

The Saturday before, we go to church to bless our basket with food, its called Święconka.  Its a Polish tradition.  The basket contains hard boiled eggs, some bread, ham, salt and horseradish.  The foods in the basket have symbolic meaning.

After breakfast we just hang out, relax and always stay to eat dinner with my parents and sister before heading back home.

  • DH and I are leaving tomorrow morning to drive down to the IL's for the weekend. Youngest BIL is leaving to go to bootcamp on Tuesday, so we are doing an Easter/BIL leaving/birthday weekend. BIL is turning 20 the day before he leaves.

This weekend will be full of eating, and I'm hoping I can get a workout or three in while down at IL's.

@HoneyBee973 Are you Polish or is your H? My H is of Polish descent, but his family doesn't practice any of the traditions.

  • @GABride2010 I am Polish, came here when I was 10-11 years old.  My husband is a mix of everything.
  • That is so neat! Do you like Kiszka or Czernina? I haven't tried either, but I want to! DH's cousin taught me how to make pierogies. Cottage cheese and onion is my favorite, but the potato and cheddar isn't bad!
Married 2-20-10        Dx PCOS 1-2013         Metformin 500mg 3x/day  Will Start TTC Aug. 2015
  • I like to have Kiszka once in a while, usually fried up with onion and rye bread on the side.  But that's something I only have by my parents house.  Idk why, its just something I never buy when I go into the Polish deli.  Never had Czernina.

If you like to make pierogi, I recommend you try making strawberry or blueberry pierogi...yum!!!!  We always  make those when they are in season and we go pick some fresh ones.

Cut up strawberries, mix them in a bowl with some sugar, and just let it sit till you are ready to make them.  If you are making with blueberries, no need to cut, but also mix with some sugar.

As a topping, mix some sour cream, half and half and sugar.  Adjust the amounts to your liking.

@GABride2010 let me know if you decide to make them, and let me know how you like it!

  • Mind = blown. I had never thought about making fruit pierogi. We will definitely have to try that!

  • I'm just so ready for the weekend.  I'm planning to relax, take a walk, do some house stuff tomorrow.  We were going to be hosting Easter on Sunday, but I went ahead and made a reservation.  We've had a lot going on and hosting was stressing me out... so, we're going out.
