Weekly Dinner Menu 7/5- Better late than never!

I realize its already Wednesday but oh well!!!  Its been rough in our house since last week.  My dog tore his ACL and had surgery last Wednesday so ive been busy juggling him.  Did everyone have a good 4th weekend?  Mine was relatively quiet as my husband worked pretty much the entire weekend except Sunday

Here is the past/present/future menu:

Sunday- we went to a bbq so  we had some sweet burgers/dogs/corn and delicious salads
Monday- Baked sweet and sour chicken with fried rice
Tuesday- Pesto Tortellini Bake-  here is the recipe, it was DELICIOUS.  I left out the chicken only because i just dont care for meat in my pasta dishes.

Wed- put my DH on dinner duty.  Steak sandwiches with french fries

Apricot chicken with cous cous
London Broil with artichoke rice salad
Penne a la Betsy (pasta with shrimp in a cream sauce) this is a Pioneer Women recipe
Burgers
Green pepper pasta with ricotta

  • @HoneyBee973 thank you!!!  Its going to be a long road to recovery but he is feeling better!  The hard part will be keeping him on very minimal activity over the next 7 weeks!  He gets his stitches out on Saturday morning.

    As for meals, I have no idea what we will eat this week!

  • @GABride2010- he did not have the TPLO.  He had the other one where they insert this mesh/wire looking thing that replaces the ACL, the surgeon actually put in two of these devices for additional peace of mind.

  • @chrisnjay05212010 I hope your dog heals quickly! My youngest, Elli, had TPLO at 9 months old. She just turned 4, and she has made a complete recovery! I hope your dog does too!

  • @GABride2010- thank you! they anticipate a full recovery but its def going to be a long road.  So hard to keep a 100lb dog quiet and relaxed  :|

  • @chrisnjay05212010 I completely understand about keeping your dog calm and quiet. The surgeon's office gave us sedatives for Elli because she wouldn't calm/quiet down, even just 12 hours after surgery! Good luck!
