Spam me your red wine recipes

I want to make braised lamb shanks this week, but I'll have about a half bottle of red wine left over that I can't drink! What else can I make with it? FI won't eat beef, so that cuts out a lot of typical red wine recipes, and he doesn't like mushrooms, so coq au vin is out. I found a recipe for grilled ham and cheese with strawberry wine jam, but it only calls for 2 tbsp of wine. Anyway, spam me!

  • Red wine cabbage and apples.  Soooo good!
    Saute onions and garlic together.
    Add chopped cabbage (I use red for a vibrant color)
    Add 2 chopped apples
    Saute for a couple of minutes. 
    Add red wine and chicken stock (50/50 blend), cover, and let simmer for 30-45 minutes.  Until the cabbage is soft. 

    My H thinks cabbage is disgusting, but he'll eat this like it's going out of style.  The sweetness that comes out of the red wine and the apples, is really good.

    Otherwise, I don't have a lot of red wine recipes that don't involve beef, but you can freeze wine in an ice cube tray.  It doesn't get completely frozen solid but it's enough to take out of the tray and keep in a ziploc in the freezer.  Then, you can use it later for when a recipe calls for a bit of wine, I think each cube is about 2 tbsp.

    Will he eat ground turkey? I usually add red wine to spaghetti sauce and ground turkey is a GREAT alternative to ground beef. I also usually add red wine to the sauce for stuffed shells (http://www.myrecipes.com/recipe/spinach-and-ricotta-stuffed-shells).

    Mmmmm....stuffed shells! He has a gluten allergy, and I haven't seen any gluten free shell pastas, but I could probably make some sort of bolognese with penne. Thanks for the ideas ladies!
