What's on your Menu? 9/26/16

I'll try to make this a regular Monday thread and will label it with the date so hopefully we don't get confused if prior weeks get bumped.


So what do you have on the menu this week?

What are you doing/making to make sure you stay within your grocery and eating out budget?

  • Monday - Grilled Pork Loin w/ Green Beans and Mashed Potatoes

    Tuesday - Baked Chicken Wraps with Rice

    Wednesday - Pulled Pork Sandwiches (our friends gave us left overs after their daughters party on Saturday)

    Thursday - Leftovers for H and I'm meeting my sister and cousin for dinner out

    Friday - Meatloaf

    Saturday/Sunday - I'm not sure yet. H is working weekend nights, so we may try to go out on night before he goes to work or make something else.

    We are typically pretty cheap for groceries because there are only 2 of us and generally we eat most of our left overs so we get multiple meals out of one.  this week we spent around $115 for groceries including a little extra to have friends over for the game and we brought a dish to a birthday party this weekend.

    Today we have crock pot chop suey cooking at home. I love that it'll be ready to eat when we get home so we don't have to rush to make dinner after work. I don't have the rest of the week planned yet.

    I usually meal plan off of meat sales and coupon clip. I've also been starting to buy the large portions of meat and freezing what we don't use right away. Last week, whole pork loins were on sale for $1.69/lb. A 10lb portion cost us $16.90, and will give us about 4-5 meals at roughly $4 or so per meal. I cut most of it into chops, and the rest of it, mostly the dark meat part, into cubes for today's chop suey. I'll probably freeze a couple meal portions of the chops.
  • Monday - Sriracha-Lime Baked Steelhead Trout and Brussels Sprouts

    Tuesday - Leftovers from Monday.

    Wednesday - Baked chicken stuffed with cheese and asparagus, rice.

    Thursday - Leftovers from Wednesday.

    Friday - Leftovers from Wednesday.

    Saturday/Sunday completely up in the air since H is supposed to camping with friends. Pretty sure I have a box of Kraft Mac n Cheese in the pantry. Yum.

    Savings - I spent $250 at Costco yesterday, mostly on food, but some on replacement homegoods essentials. It should easily bring us through the next two weeks with the veggies and fresh meat I bought without having to supplement at the grocery store.
  • Yesterday: Mango lime pork chops, fiesta pasta salad, and green tea peppercorn beans and carrots.  So good.

    Tonight: Brats, pasta salad, and fruit.

    Tuesday: Tuna noodle casserole

    Wednesday: Guaconachos out with MIL.

    Thursday: Leftovers before church class

    Friday: Unplanned

    I'm trying really hard to get even more fresh fruits and vegetables in our house, and cut out the processed crap a bit more.  Now that we're no longer in survival mode with DD and I feel like we can actually function a bit, I can focus on us eating less quick meals.
    I'm also planning around things we have in the pantry and freezer.  We get a whole pig this week and 1/4 of a cow in December.  So I'm trying to make room.

  • I don't typically plan which meal will be eaten on which day but I plan "hey these 5 things need to happen this week". And even that's been slacking a bit. Yesterday I prepped a bunch of pasta w/chicken and pesto for lunches this week and hardboiled eggs for breakfast.  We have a bunch of sandwich stuff that will make a few dinners this week. 

  • I love this too!  I just hope I can remember each week because it's written down at home.

    Dinners:

    Sunday - Ground beef tacos with mexican rice

    Monday - Chicken shawarma with yellow rice, homemade pita, sauteed zucchini

    Tuesday - Sour cream noodle bake

    Wednesday - nothing planned here.  H is going to a hockey game so I'll probably just pick through leftovers or have a sandwich or something.  Nice to have a night off from cooking during the week!

    Thursday - Asian marinated chicken drumsticks, rice, spicy snap peas

    Friday - No plans yet.  It's my payday so we may just go out to eat.  

    Lunch: (these are just my lunches, H is on his own LOL)

    Monday: leftover pizza.  We took home a whole pizza after helping our friends move because they over ordered.

    Tuesday: leftover chicken shawarma 

    Wednesday: leftover sour cream noodle bake

    Thursday: Not sure yet.  I have a frozen meal in the work freezer I need to eat before my last day, so maybe that

    Friday: We are having lunch provided at work.

    This week, I did a really good job of planning around what I had in the fridge and freezer.  I only spent $36 at the grocery store.
  • I plan Saturday-Friday since I shop on Saturdays.

    Saturday - curried tofu and delicata squash with rice
    Sunday - sundried tomato and goat cheese ravioli with mushrooms and tomatoes
    Monday - shrimp and veggie stir fry with rice
    Tuesday - leftovers
    Wednesday - grilled chicken and veggies
    Thursday - minestrone soup and crusty bread
    Friday - out
  • Sun - Qdoba (free after coupons!)
    Mon - Bacon wrapped chicken with frozen vegetable
    Tues - Dinner out
    Wed - breakfast for dinner: scrambled eggs with cheese and onion, bacon, tater tots, fruit smoothie
    Thurs - going to a pizza party
    Fri - going to a benefit party
    Sat - dinner out

    We'll be using coupons and gift cards for the dinners out.  Also trying to use up some eggs and cheese that are in the fridge getting old.

    Is the bolded the TS green tea peppercorn seasoning?? If so, I LOVE that stuff. It's becoming one of those I put that S*** on everything kind of seasonings for me. It even got my H to eat vegetables.. and he has not eaten vegetables in the entire 12 years I've known him.

  • @abrewer5 It sure is.  I sell TS so I have a pretty good stash of seasonings to make veggies taste decent.
    The mango lime pork chops is chops with their mango lime sauce on top.  So good.

  • Sunday - Fried Chicken (store bought), mashed potatoes and rolls (both from pantry stock)
    Tuesday - Cheeseburger casserole (bought ingredients)
    Wednesday - Crock Pot BBQ ribs (from freezer stockpile)
    Thursday - leftovers
    Friday - dinner out
    Weekend - TBD

  • Sunday: salad with arugula, bacon, red cabbage, carnival squash, apple, goat cheese, bacon, and warm dressing

    Monday: had the same salad for dinner since it was easier to make at home; I had homemade roasted tomato basil soup for lunch, and H had pasta with onions, braised greens, and bacon

    Tuesday:  eating leftover for lunches and dinners out of the salad, soup, pasta dishes I made

    Wednesday: chicken sausage rissotto with garden salad

    Thursday: burrito bowls with black beans (cooked with tomatos and onion), rice, avocado, and salsa with sauteed peppers and onions

    Friday: homemade pizza dough with beet pesto, chopped kale, mozzarella, and goat cheese with a garden salad

    Saturday: salmon and whatever veggies need to be cooked up for me; H usually buys dinner at work 

    Lunches (H works evenings so he technically takes dinner...) are leftovers from those meals. 

    Breakfasts are a big batch of steel cut oats cooked with apples & banana and peanut butter added for the first part of the week, and a leek goat cheese quiche with a sweet potato crust for the second part of the week.
