  • I'll give this a try, I stink at planning

    Mon- Leftover rotisserie chicken, stuffing, and a veg

    Tues- Hot dog casserole

    Wed- Soup, grilled cheese

    Thurs-Pasta

    Friday- Pizza

    It's probably 50/50 on the meatless thing...I'm not a big meat eater but H likes it

  • Unfortunately, all I have planned for the week is tonight's smoked pork chops with corn and salad.

    And meatless?  Rarely.  Though I am picky about the quality of my meat.  Fortunately though, my mom and brother help stock our freezer every year from their small town meat locker or directly from the farmer.

    Monday - either BBQ leftovers or chicken parm stuffed spaghetti squash. I'm hoping H has enough leftovers from yesterday because I do not feel like cooking tonight. Otherwise I'll just eat mine and he can fend for himself.

    Tuesday - chicken parm stuffed spaghetti squash if I don't make it tonight

    Wednesday - crockpot chicken and dumplings

    Thursday - Leftovers

    Friday - Taco night

    Saturday - we'll go out to dinner. I won tickets to a beer tasting event that day so we'll make a date day out of it.

    We rarely go meatless. H feels like he has to have chicken/beef/pork with every dinner in order to feel satisfied. Occasionally I can get away with things like black bean burgers but it's not often. I'd love to meatless a few times a week. It would save money and force us to be a little more creative & healthier.
  • Sunday - leftover hot dogs, pasta salad and beans
    Monday - Grilled marinated turkey with leftover pasta salad and beans
    Tuesday - Leftover turkey with salad
    Wednesday - either chicken stir fry or go out with friends
    Thursday - frozen macadamia fish with veggies
    Friday - grilled chicken and veggies
    Saturday - Grilled cheese and soup

    H isn't a fan of going meatless so we maybe average .5 per week (or 1-2 times per month).  Grilled cheese and mac and cheese are the two regular meals we have that are meatless and those are more frequent in the winter.  When H was unemployed I added 1 meatless dinner per week to menu planning to cut down on groceries.
  • Sunday- we have teriyaki chicken on cauliflower rice, with roasted brocolli on the side

    Monday - chicken sausage and farro stuffed acorn squash and sauteed spinach

    Tuesday - egg roll bowls with shrimp

    Wednesday - beet and scarlett turnip gallette

    Thursday - either out (we are both off work) or scallops and roasted vegetables

    Friday - baked double crunch chicken with roasted vegetables

    Despite the above meal plan we actually eat meatless a lot.  Last week we ate meatless for 6/7 nights. This recipes I picked based on the CSA veggies I have on hand, and some recipes H requested, we have ended up with only 1 meatless night. Average is probably 4 nights meatless.
  • Monday -- Pizza (mystery shop)

    Rest of week -- marinate chicken breasts, that will be a few meals this week, match with green beans or salad.  Cook up hamburgers (lean ground beef).  Probably go out for dinner one night.

    I'm not a very good meal planner, lol.

    Both my H and I are serious meat eaters.  We rarely have a meatless meal.

  • I honestly have nothing planned at this point but this is a good place for me to start thinking...

    Monday - Pizza (if our family comes over for trick or treating) otherwise probably leftovers from grilling yesterday

    Tuesday - Maple Dijon Chicken w/ Rice and veggies

    Wednesday - Chili with corn bread

    Thursday - Leftovers

    Friday - I think we're planning to do steak and steamed shrimp

    Saturday - Good chance we will eat out

    Sunday - H will be at a football game all day so we'll probably just do left overs when he gets home


    We hardly ever have a meatless dinner. H and I both really love meat and he hates 99% of veggies so it would be difficult to make him dinner without meat. Plus I need protein to feel satisfied.

  • Monday - Leftover white chicken chili

    Tuesday - Grilled chicken thighs and a vegetable.

    Wednesday - Leftover thighs and veggies.

    Eek...I just realized I need to plan out the rest of the week. We have plenty of stuff in the freezer so I just need to start defrosting some chicken.

    It really depends on the week. Sometimes we don't have meat at all, sometimes it's with every meal. It's not something I really think about a lot. A meal feels complete to us with or without.

    Monday- my parents are bringing dinner over. They're staying at our house to pass out candy while we take the girls trick or treating. Whatever it is, it will be 100% meatless (they are both vegetarians).

    Tuesday- pesto pasta, asparagus, vegan sausage, feta, lemon.. it's really good!

    Wednesday- spaghetti, homemade sauce with zucchini, peppers, onions, tempeh metaballs

    Thursday - tofu, salad, sweet potato fries

    Friday- homemade pizza with broccoli, salad.

    That is a meatless week for us- we usually only eat meat 1-2 days a week. DH and I love fish, especially salmon, but the girls haven't warmed up to it yet, so we usually save it for dinners out.

  • Tonight we are getting a pizza from Papa Murphys

    Tomorrow I'm going to try a new crock pot recipe -chicken taco chili

    That's all I got so far :)  The more I do yoga the less I feel I need meat and instead want more veggies.  I have no idea why.  I use to always have to have meat with dinner.  I'd say almost all of our dinners include meat for DH.  I could seriously just eat pasta without meat but he wants it.  I would love to be able to learn more veggie meals but just haven't put forth the effort.
  • Sunday - Herbed pork tenderloin wrapped in prosciutto, sauteed garlic broccolini

    Monday - H's family's goulash.  I actually don't like it much (uses a ton of Velveeta) so I may just have a sandwich.  

    Tuesday - One pot Mexican Chicken and Rice

    Wednesday - Flat Iron steak, baked potato, asparagus, may grill this, we got a new grill on an awesome sale, it's being put together today.

    Thursday - Something asiany with chicken, rice, and snap peas.

    We pretty much never go meatless.  I do better on a higher protein diet, and H's last blood work showed he was low on iron (common for his Crohn's) so in addition to supplements we're trying to eat more iron-laden foods, which is a lot of meat.
  • Sunday: had crockpot balsamic roast beef with carrots. A trick or treater actually told me the house smelled good from the doorway haha.

    Monday: rotini with white beans & escarole (new recipe)

    Tuesday: some sort of pork chops, & veggies

    Wednesday: spinach parmesan linguine (new recipe)

    The rest of the week isn't planned yet, and actually the meals above were planned for last week but didn't happen. H likes meat a lot but I do try to plan at least 1 meatless meal per week, mostly to keep costs down.
  • I don't really plan each day - I plan enough for the week and then each night pick what we're in the mood for (especially lately with IVF meds making me constantly feel sick)

    1. Chicken piccata 
    2. Spinach salads
    3. Roasted veggies and some protein (TBD from the freezer)
    4. Pantry pasta (I have a few different options, usually involving artichokes, anchovies, sundried tomatoes, capers, etc.)
    5. Grilled cheese and soup

    We eat a decent amount of meat/fish but we aren't the type of people that feel like it doesn't count as dinner without a slab of meat on the plate. 
  • We don't really eat a ton of meat, especially at home.  DH will order beef dishes sometimes when we go out or get takeout because we don't cook it at all at home.  We're pretty content eating meat or fish once or twice a week.

    This week's menu (I plan Saturday-Friday):

    Saturday:  went out

    Sunday:  pasta with marinara and sauteed veggies (peppers, onions, mushrooms, tomatoes, broccoli)

    Monday:  baked quinoa and chicken parm with roasted broccoli

    Tuesday:  teriyaki shrimp and veggie stir fry over rice

    Wednesday:  sloppy lentils, cut up veggie sticks, oven fries

    Thursday:  southwestern farro (farro with black beans, peppers, onions, corn, salsa, avocado and cheddar cheese)

    Friday:  leftovers
  • Last night-We had a noodle soup with tofu I like to make

    Tonight-Arugla pesto pasta

    Wednesday-Homemade pizza

    Thursday-Bean and rice dish

    Friday-Blue Apron (fish)

    Saturday-I will be out, H will probably make a chicken Blue Apron

    Sunday-Blue Apron (vegetarian)

    As you can see, we go meatless a lot! I'm pescatarian but really lazy about cooking fish at home. H is fine with eating meatless most nights, but prefers really high quality (read: expensive!) local meat when he does have it.

    That sounds really good.  I do some different burrito bowls, stuffed sweet potatoes with that kind of stuff in it etc. but the farro sounds really good too.  Will have to mix that in
  • The farro is actually my favorite for "bowl" dishes like that.  I love the texture, it has a nice bite that I prefer to rice or quinoa (though obviously I eat all three of these based on my menu this week!).  It's nice to have something different in the rotation and it reheats really well also.

    @xstatic3333 - do you like blue apron? I get $30 gift cards from them all the time, but I'm nervous to use it with the girls. Not sure they'll go for the flavors (esp DD#2). Also can you entire dietary restrictions at all? We don't really eat red meat at all so I don't want to end up with something we won't make. TIA :)

  • @cbee817 we do like Blue Apron, but we definitely consider a "fun" expense. It doesn't save money and compared to how we cook doesn't save a lot of time either. It's more of a fun way to try different, really tasty meals. We've been happy with the quality. 

    Special diets are definitely no problem. I'm pescatarian, so we usually chose either meatless/meatless/fish or meatless/fish/chicken. They only let you chose certain combos so I'm not sure if you can do a chicken/chicken/fish or not. Some of the flavors have been on the "exotic" side (curry, a little bit of spice that you can modify to your taste, etc.) but we're on the two person plan. The family plan seems a bit more mellow. You can always skip a week if  nothing appeals to you. We really just do it every other because it's pricy.
