NMMR:Healthy Breakfast Ideas

edited November 2016 in Money Matters

So I've been slacking on eating good overall and letting junk food creep back into the house...I have 0 concept of stamina when it comes to temptation...When trying to be healthy I feel like there is always nothing to eat and I just eat the same things and get bored. So I've decided to get back on the healthy train 1 meal at a time starting with B/fast. I like to eat normal breakfast foods in the morning and I don't drink tea or coffee. Below are some of the things I normally eat that aren't so healthy but I'm in a rut and need other ideas. I always need to eat breakfast first thing in the morning or I can't function. What are something things you eat for b/fast or do you have any good ideas?

Ceral + banana  (Usually Cheerios,Raisin Bran)

Pancakes or waffles w/butter and syrup (and usually choc chips)  :o

Eggs and toast on the occasion

I do like oatmeal too, but don't know what to put in it other than milk and sugar for flavor

Re: NMMR:Healthy Breakfast Ideas

  • I LOVE oatmeal. I'll cook it with some apples, bananas, or dried apricots and sprinkle some cinnamon in with a splash of milk. Almonds and walnuts on top for some extra protein. There are a million other things if you look up some recipes.

I also kind of love egg salad sandwiches or peanut butter sandwiches for breakfast. Fast, easy, cheap, and portable if I'm running late.

For awhile I was making breakfast burritos on Sundays or Saturdays for DH and I. This recipe made 16 burritos and stayed fresh in the fridge for the 8 days it took to eat them all but I think I could have frozen some of them and then microwaved for like 2 minutes to get them hot again.

2 lbs of ground turkey, cooked.
    12 eggs, scrambled
    4 bell peppers, chopped
2 cups reduced fat Mexican style shredded cheese (MM, buy large blocks of cheese and shred them yourself and keep frozen)
Lots of hot sauce (we were adding Sriracha)
large low-carb tortillas (except sometimes I cheated and bought regular tortillas)

Mix all of the ingredients together in a bowl and roll into tortillas.

I'm on Weight Watchers and entered in this recipe, it's 6 points per burrito. You could also add onion and cook the onion and peppers together a bit before adding to the mix.

ETA - I went for a pre-prepped meal like this for breakfast because DH and I struggle to get up early enough in the mornings to make a real breakfast, so something that was grab and go or could even be tossed in a lunch bag worked for us better than most other options.
  • Sadly, I think a lot of my problems aren't so much what I eat as how much I eat.  I come from an old Italian family where the food on the table was considered a "portion".  I read somewhere that it takes 20-30 minutes for your body to start to feel "full" and if I'm not full, I eat.....

  • I like to make breakfast sandwiches and freeze them for easy heat up. Usually I made them on Sunday. They aren't the most healthy thing, but way better than grabbing breakfast out.

    Thomas Light English Muffins

    Eggs

    Cheese

    Jimmy Dean Turkey Sausage Patties

Toast the English muffins. Cook the eggs. Put half a slice of deli cheese (or use shredded) and the turkey sausage patties on the toasted English muffin then add the egg. I usually just fry the egg but you could do scrambled too, or just egg whites to make them lighter. Once they're all put together and cooled I wrap them in cling wrap and put in the freezer. Then I heat them for 60-90 seconds when I'm ready to eat.

    Roughly 280 calories - 19g protein, 28g carbs, 15 g fat

I also really love making scrambled eggs and adding broccoli and a little bit of cheese to them. :)

  • If you like eggs, use just the whites.  If that isn't quite satisfying or tasty enough, it isn't for me, than use some of the yellow but not all.  I'm happy with a "2 eggs white only with 1 whole egg" ratio.  Egg whites are extraordinarily healthy.  They are pure protein with few calories or fat.

I also sometimes make a big batch of egg salad for sandwiches.  I'll eat those any time of day!  Again, I use only about 1/3 of the yellow from the eggs.  Mix it with lots of herbs/spices, like dill and paprika.  And use very low fat mayo.  I've never tried mixing it with plain yogurt instead of mayo, but that might another interesting option.  Now I'm curious, lol.

Speaking of plain yogurt.  I'll sometimes have that for breakfast and mix in some fruit and nuts.  If you need a little extra sweet, 1-2 squeezes of honey will do that.

I love raisins in oatmeal and craisins in either oatmeal or my plain yogurt concoction.  Dried fruits are high in calories and natural sugars, so just watch the portion size.  But a little goes a long way with flavor.

I hardboil 10 eggs/week for DH and me (1 egg per person per day). Sometimes I slice it on toast, other times, I throw a small piece of colby cheese on it with salt and pepper. It's filling, super quick, and I only dirty a tiny cutting board and a knife.
The girls get mini bagels, waffles, or cheerios with blueberries- they like more in the morning,

  • Cheerios and Raisin Bran aren't healthy?  Since I didn't know that you should take my suggestions with a grain of salt!

If I remember correctly protein is supposed to be good because it fills you up: hard boiled eggs (just the whites to be healthier), cottage cheese.

    Cinnamon makes things taste good.

I sometimes whip up a quick egg white omelette in my Tupperware microwave omelette maker, only takes a few minutes.  I like egg white with spinach, tomato, mushroom and onion.
  • I also sometimes make mini omelets in a muffin tin. I use full eggs, but you could probably do it with just the egg whites if you prefer that (I think egg whites alone are gross). Spray the tin REALLY well and throw in whatever veggies/meats you like (or need to use up lol) and then top off each cup with the egg. Takes about 10-15 minutes to bake in the oven and they keep in the fridge for about a week.

Great, thanks for all the good ideas! I need more variety and I think the above will help. Plus it will be good to cook/prep things ahead to save some time
  • A little spendier and may not be your cup of tea, but I like eating raw fish for breakfast.  Lox or sushi.  I always feel great and energized for the day when I do.

Most people eat lox with cream cheese and a bagel.  Delicious! But not so healthy.  I buy a big thing of Lox cheaper at Costco/Sam's and eat it for breakfast (no bagel/cream cheese) with a small portion of eggs.

  • H and I are currently eating whole/unprocessed foods and we are dairy, grain, and gluten free. So we eat A LOT of eggs, usually hard boiled in the morning. We also have a lot of protein shakes for breakfast, sometimes we have some coconut milk yogurt. I leave for work at 6:30 a.m. so I need to have something that I can have ready the night before. I usually pack everything and actually eat breakfast in my office. It's been fine since we've been eating this way, but as winter comes, I don't know that I'll like that all of our options are cold. I may have to get creative starting next month.
  • I have the same breakfast every day; an "egg sandwich" that is just two eggs on an English muffin with hot sauce. I usually fry the eggs but break the yolk so that it won't splatter all over me. If I don't have protein for breakfast I'm a very grouchy person! I can't do just the whites. I need the yolk, but at least there's a lot of good nutrients in there with the fat and cholesterol.
  • I'm boring, I eat a protein bar for breakfast every weekday morning.  It's a Kroger brand, Simple Truth, and each bar is 79 cents.  It's got 230 calories and around 21g of protein, and not tons of sugar (unlike brands like PowerBar) so it does the trick for me.

I don't like eggs, so finding breakfast options with lots of protein that also weren't tons of calories was challenging.  I also liked eating cut up apples with greek yogurt and granola and cinnamon, but I'm pretty lazy in the morning and I didn't like it when I made it the night before.  And it was pricier per serving than the protein bar.
  • Breakfast is actually my favorite meal of the day and sometimes I eat it for dinner when I am alone, but unless it's at an IHOP or diner, nothing excites me  when I make it at home...
  • I eat the same for breakfast every day.  I"m not a huge breakfast person.  I make oatmeal and alternate between strawberries, blueberries or raisins as an add in.
  • My go to quickest and easiest breakfast would be a pb&j or pb&honey sandwich.

I usually have something ready to heat up in the fridge though.  Often an egg bake, like described above in the muffin tins but I usually just make it in a big pan and cut it into squares (because I hate cleaning a muffin tin).  This week I have a bunch of precooked sweet potatos so I have been having a sweet potato with salsa along with my eggs.
  • I'm no help.  I usually eat either a Lara or Kind bar in the car on the way to work.

Ooohhh!  My all-time fave is their Swedish breakfast.  It's crepes instead of pancakes with Logenberry butter.

When I first moved to NOLA, there were no IHOPs within hours of here.  Blow to morale!  But they have since seen the error of their ways and a some IHOPs have been opened in the last few years.

I have GOT to try the crepes next time I go back!
  • Egg muffins (Pinterest has a ton of recipes) - egg, peppers, mushrooms, turkey sausage, etc.

I do a lot of smoothies but I'm not in love with protein powder so I usually use plain greek yogurt.  My friend recently had me try her new favorite (I guess it's a THM recipe: cottage cheese, almond milk, a couple tbsp of unsweetened coco powder and sweetener - she uses stevia).  Toss in the blender until smooth.  It's surprisingly super yummy!

I grab the triple zero greek yogurts since they are easy to eat at home or at work.

When I'm home on the weekend I like a fried egg, a slice of toasted Ezekiel bread w/ coconut oil or butter, and turkey sausage.
