NMMR Holiday Dishes

We are heading to IL's early Friday afternoon for the long weekend. They live 6 hours away, and in the middle of nowhere. I'm trying to think of what we can bring to eat that will travel well. The closest grocery store to them is about 20 miles away, and we won't be passing it to get there. MIL is gluten free, so our options are a little limited. Any tried and true traveling recipes or recommendations?  I'm definitely looking for healthy(ish) and nothing sweet. 

I never show up at someone's house empty-handed, but the 6 hour drive is complicating things.

  • Does it need to be food?  Because this is when I would just pick up some wine or booze.

  • The wine is already packed!  Haha. I guess that's sufficient, it just feels like it's not enough when we'll be staying at their house for four days. 
  • You can always throw a cooler in the trunk if you feel the need to bring food and don't want to worry about it making a long trip. Crustless quiches for breakfasts, or a casserole for dinner. Then you just have to pop it in the oven when you get there. 
  • fruit that can be chopped into a fruit salad when you get there.  chili
  • High quality cheese/charcuterie for Christmas snacking. 
  • I'd bring some fruit and chop it up when you get there.  It's naturally gluten free.
    This is a recipe for a winter fruit salad I've made a few times.  It isn't insanely sweet, but are things you can easily find this time of year.


    2 red apples, cored and diced
    2 Pears, cored and diced
    4 Clementine, peeled and separated into segments
    3 kiwi fruit, peeled and sliiced into thin rounds then slice rounts into quarters
    1/2 C dried cranberries
    1 C pomegranate seeds

    Dressing:
    2 tablespoons maple syrup
    1 Tablespoon fresh lime juice


    Toss together

    TTC since 1/13  DX:PCOS 5/13 (long, anovulatory cycles)
