Last night was pulled pork in the crockpot, coleslaw and roasted potatoes. It was delicious and I'm hoping H didn't eat all of the leftovers today.

Today is chicken, quinoa and broccoli casserole. Healthy, hearty and will be enough for tonight and tomorrow night.

Thursday I might do chicken pot pies - H has been wanting me to make the little ones in the muffin tin. Super easy, cheap and filling.

Friday I'm not sure. We might do a pizza night.

ETA - to answer the question, I'm team Kraft mac all the way!
  • Sun - chili and cheddar biscuits
Mon - tilapia on the George and frozen mixed veggies
    Tues - leftover chili
Wed - out to eat with a coupon
Thurs - grilled chicken and salad
Fri - fast food with a coupon
Sat - beef roast.  This is not something we are used to making.  I'm not sure what veggies/recipe we'll use but I look forward to letting the crock pot do the work.

I grew up on Kraft mac and it is nowhere near as good as homemade but I don't knock it for a quick (and cheap) meal.  H says he prefers Velveeta but he is also down with Kraft.  I don't have a lot of experience with Velveeta so I'm not sure what I think of it but I generally don't like nacho cheese sauce things so I am skeptical.  I like my Kraft mac with peas--anyone else eat it that way?

  • I grew up on Kraft as well and tend to prefer it, but I'll eat either without any complaints.
    Daisypath Anniversary tickers
  • Monday - pork tenderloin with rice and creamed spinach
Tuesday - leftover pork with....something. Maybe rice and another veg.

The rest of the week will be whatever I feel like pulling out of the freezer. Pregnancy is still messing with my appetite so I try not to plan too far in advance so I can see what my stomach will be in the mood for each day. We're attempting to reign in our food spending and step one is to work through the freezer and pantry. Our choices are tacos, sausage (which I mix with pantry ingredients for a few different pasta dishes), and honestly...Kraft mac and cheese hahaha. My husband bought a MASSIVE box of it on super sale a while back to when we're extra lazy it's KD and dinosaur nuggets all the way. Breakfast for dinner is a big hit too and we do have some bacon to use up....hmmm....

A whole lotta nothin'... well almost.  With this being the first week of H traveling, I'm taking a kitchen break.  I did make this recipe on Sunday night to have for dinner last night, and for some lunches this week: http://www.seriouseats.com/recipes/2011/12/serious-eats-halal-cart-style-chicken-and-rice-white-sauce-recipe.html

Otherwise, I'm just eating what I feel like when I get home from work.  I also have to bake some cookies tonight for a work potluck tomorrow.

Oh, and out of the two, Kraft I guess.  My favorite boxed mac n cheese though, is Trader Joe's shells and white cheddar.
  • Monday- Leftovers of pasta for me and sloopy joes for H

Tuesday- broccoli cheddar soup we just made last night..maybe with grilled cheese

And...the rest of the week hasn't been planned yet..we are bad about cooking lately

The one and only Kraft mac and cheese....I love this stuff so much, I could eat it every night!

  • I honestly haven't even considered what I'll be cooking for the week. My head has been so wrapped up in the car stuff that's all I've thought about it.

Last night we had crab cakes.. YUM! We went out Sunday for dinner and ordered two just so we could have them to eat yesterday too.

Tonight we'll probably do chicken wraps.

I have no idea for the rest of the week.

I will eat any kind, but Kraft mac and cheese if it's in fun shapes (I'm still 10 at heart) :D Mac and cheese is one of my primary food groups lol.

If I were you I would be having a cookie dough dinner tonight.  In my house that happens when H is OOT.

Tonight is leftover chicken noodle soup.

Wednesday, one of my freezer meals - Honey Dijon Pork Chops with green beans and potatoes

    Thursday, leftovers.

Friday, maybe baked ziti and garlic bread.

Saturday and Sunday will be more leftovers/whatevers.

ETA: Definitely Kraft if I don't have the choice to make my own mac n cheese. 99% of the time I have the ingredients on hand to make Pioneer Woman's macaroni and cheese and I can't ever go back to the boxed stuff.
  • Yesterday we had spaghetti so that's also lunch today.
Tonight we'll probably have frozen chicken cordon bleu with veggies.
The rest of the week is up in the air, but we have a ton of meat and some fish in the freezer at our disposal.

    Also, Kraft mac n cheese!

The shapes are the best!  But I have forced myself to stop...the box costs the same even though you don't get as much volume with the shapes. I may still be a child in my food choices, but I decided I have to be an adult when it comes to unit sizing lol

Well that makes me kind of sad, I never realized that! I've always had fun trying to figure out what the distorted shape was supposed to be lol. I also like the texture better of the shapes, but now I will probably buy more responsibly as well.

I buy dinosaur chicken nuggets in bulk from costco so that my meal has SOME shapes haha. And my husband just emailed me that he won't be home for dinner so kraft dinner and nuggets is TOTALLY going to be my dinner now lol

All this talk of mac and cheese and chicken nuggets has me wanting to scrap my current dinners plans and eat like a kid again!
  • I made chicken enchiladas and deer chili on Sunday, so that is what we are eating for dinners all week. If we run out of leftovers before Saturday (dinner at a friend's house that night), we will thaw some homemade turkey soup or some chicken breasts to try these new Stouffer's seasoned papers to cook the chicken in.
  • I'm going to sound super un-American, but I don't really care for mac 'n cheese.  It's okay for a side, not for a meal.  I've never had it with Velveeta.  So I guess I fall on the Kraft side.

For me, the only way it can semi constitute a "meal", is if there is stuff added to it.  I especially like it with Spam and fresh tomatoes.  I realize Spam is a weird choice for most people but, my mom grew up in Hawaii, and we ate it a fair amount.

We buy the bulk boxes of Kraft a few times a year at Sam's Club.  My H likes it and will sometimes cook it for dinner.  I forage for other things on those nights, lol.

Look up some vegetarian chilis with a butternut squash or pumpkin base.

This is one of my FAVORITE vegetarian recipes.

    http://juliasalbum.com/2014/11/black-bean-and-butternut-squash-enchilada-casserole-recipe/

ETA: My FIL, who does not like butternut squash at all, LOVED this recipe when I made it last November.
  • I am obsessed with cauliflower right now.  It's great roasted with olive oil and spice or seasoning of your choice.  Also, roasted beets. Soooo good!

  • @labro - I love butternut squash.  I'll have to check it out

@als1982 - roasted beet sounds great!  I love beets in general.
