Recipe I HAVE to share

I made this last night.  It was so quick and was very good. 

Shrimp Scampi (the recipe is from my Betty Crocker Newlywed Cookbook)

1.5 lb uncooked medium shrimp (I used half a bag of frozen shrimp)

2 tablespoons olive oil

1 tablespoon chopped fresh parsley

2 tablespoons lemon juice (I used fresh lime juice since I didn't have lemons)

1/4 teaspoon salt

2 medium green onions, thinly sliced (I used yellow onions)

2 cloves garlic, finely chopped

Grated parmesan cheese

1 lb of potato gnocci (I added this, I usually use pasta but it was really good with the gnocci)

1.  In a 10 in skillet, heat oil over medium heat.  Cook shrimp and remaining ingredients except cheese in oil for 3 minutes, stirring frequently until shrimp are pink and firm; remove from heat.  Sprinkle with cheese.  I boiled the gnocci in another pot and added them to the pan once cooked.  I highly recommend trying this.

  • It sounds really good!  I thought scampi always had a ton of butter in it, though, so this was surprising... in a good way. LOL
  • I know.  It is super healthy and really good and really quick!  I am telling you, the potato gnocci (from Trader Joe's) really made the dish I think and the fresh parsley.  I will be making this much more.
  • I doubt we'd do the gnocchi.  I've been meaning to try it, but want to try to make it fresh (I saw it on a Rocco diSpirito show and it was actually easy to make from scratch, but I don't have a ricer.)

    I'm so tired of hearing how great Trader Joe's is. LOL  Everyone raves about it and the nearest one is BY YOU in Chicago! Crying  It sounds like this would be my favorite store ever.

  • It does sound yummy!  Never heard of gnocci but I looked them up online and they sound good but we don't have a trader joes (never heard of it until you ladies).  Where else do you think you could get gnocci at?

    And Graves you can find gnocchi at any grocery store. Usually by where you would find tortollinis in either the refidgerated or freezer sections.

    I LOVE gnocchi with a good vodka sauce!
