I know it's always asked, but I am wondering if anyone has rec's for any particularly healthy crockpot recipes?

I used to use the Fix it and Forget it Light cookbook frequently.
crockpot stroganoff is super easy...
1 package of cubed beef for stew OR chicken cut up
1 can r/f low sodium cream of mushroom soup
1 package onion soup seasoning
1 onion, chopped
garlic, and any other spices
set on low for several hours. About an hour before serving add 1 package sliced mushrooms, 1 tub r/f or n/f sour cream, and if you like it extra creamy you can add in r/f or n/f cream cheese.
serve over whole wheat egg noodles.
This isn't healthy, but it's really tasty and easy and some modifications can at least make it...not as bad. It's supposedly 385 calories/ and 18 grams of fat/serving with normal soup, so adjust downward if you use healthier soup. This should make 6-8 servings.
Ingredients
4 skinless, boneless chicken breast halves 2 tablespoons butter 2 (10.75 ounce) cans condensed cream of chicken soup (use the lower-fat, lower-sodium kind) 2 cups frozen mixed veggies 1 onion, finely diced 2 (10 ounce) packages refrigerated biscuit dough, torn into pieces (very important to use the regular ones, NOT any marked Buttery or anything like that)Directions
i found a bunch of good recipes here.
i think one of her kids has celiacs or something, so the recipes are gluten free, but you can modify them to your taste pretty easily. and if you use mostly low/nonfat ingredients, it makes a lot of them fairly healthy.
