Has anyone made these before and have a good recipe to share? I have found a few recipes online but would rather have a recommendation from someone.

have you checked the frozen section at the grocery store? they sell some frozen sweet potato fries around here, they are super good.
if not, you could probably just slice the sweet potato, drizzle with olive oil, sprinkle with salt, and bake.
TRADER JOES! They make yummy fries that are in the frozen section!
But if you want to make them on your own, get like 4 sweet potatoes slice them into slices. get some olive oil and your favorite seasoning and mix it the slices and the olive oil mixture together... (i usually put them in a big salad bowl that has a lid so i can just shake it to mix)
Then... cook them on 400 (i think) for 10-20 minutes. (depending on your oven) They should be crisp but still a little soft inside.

sweet potato fries!
We always make them from scratch but they never come out as crunchy as I would like. I just read on a food blog that if you soak the fries in water for 20-30 minutes before cooking, they will come out crunchier. I haven't tried the technique out but just thought I'd pass it along.
