Last night's dinner was SOOO good so I have to share it with you guys (Oh, and Paula I have not forgotten that you want my other recipe that I keep forgetting to send...I'll try to do that tonight!).
Picante Chicken (From the Biggest Loser cookbook)
4 chicken breasts, trimmed of fat
1/2 cup mild picante and 1/2 cup medium/hot picante (It calls for 1/3 and 1/2 but it didn't seem like it was enough so I added more) mixed together.
Softened cream cheese (fat free or reduced fat of course)
Reduced fat shredded cheese (I used the mexican cheese)
preheat oven to 350. Put half of the picante mixture on the bottom of a 13*9 pan. Cover one side of each breast with cream cheese (It doesn't take much - less than one ounce total for all four). Place in pan with cream cheese side facing up. Pour remainder of picante mix evenly on top of chicken. Cover with aluminum foil and cook for 15 minutes. Remove from oven, remove foil, pour cheese evenly over chicken and cook uncovered for 15 more minutes.
And it's done. Quick, easy and my husband loved it (he even helped me clean the house afterwards!)...

Stupid question alert:
is picante the same as salsa or is picante just a red sauce (like enchilada sauce)?
Picante is basically salsa. I buy Pace Picante Sauce.
Paula: My recipe calls for 4- 4 oz chicken breasts. Although I did forget to check and see what it says one serving is in the calorie portion. I'm pretty sure it said it made four servings though.
I wonder if we have different cookbooks? Perhaps they have some of the same recipes though?
