I made the beef and rice stuffed peppers last night and I loved them. Derick loved them too. I soaked the peppers as you suggested and liked it much better than boiling them. I was afraid of the brown rice, but I couldn't taste a difference.

YUM - I wish I had some more. LOL Yeah, I can't wait to make them again and just soak them instead of boiling them... they got a little too squishy for my preference. LOL
I LOVE brown rice. I've even converted Greg. LOL He said something to me a few weeks ago, something like "I don't think I could eat white rice anymore..." LOL It's chewy!
We've experimented with the wheat bread. We've finally settled on the Weight Watchers Whole Wheat bread and I honestly can't tell much of a difference at all. (We used to use Sara Lee Delightful Whole Wheat, which has almost all the same nutritional info as WW. That was decent but all they stock up here is Whole Wheat w/Honey, so it always annoyed me how it had just a hint of sweet to it.)
We use whole wheat pasta now - some you definitely notice more than others, but pasta can be a tough switch. I'm a huge advocate of it, but I can understand not everyone can tolerate the taste difference (it's really a little bit more of a texture difference.) For me, it's all about the numbers and when I compare the nutritional info and see 2 oz of white pasta versus 2 oz of whole wheat pasta, then feel how hungry I get after 2 oz of white pasta, it convinces me to go whole wheat. LOL Again - that's me and my whacked out priorities. I have found spaghetti doesn't feel as big of a difference as say.. rotini or fusilli. (I recently have tried the whole wheat egg noodles - the wavy ones? I'm liking those - just used them, in fact, to make two lunches for the week.)
