Re: WFD?
Mmm, if they have been marinating since yesterday they will taste SO good. We picked up a bottle of the spicy garlic sauce last time we were there. I love dipping grilled chicken into it for a kick.
I just bought a meat pounder over the weekend. My mom used to pound out chicken breasts a bit so they would cook more evenly and so I finally picked one up. Up until now I was using anything from a rolling pin to a metal spatula to do it. LOL
Your dinner sounds fab, enjoy.
If he serves you black-eyed peas, don't eat 'em!!
Jen, I use a rolling pin. LOL I realize every time I'm doing it that it must be one helluva sight - me in the kitchen whacking chicken breasts yielding a rolling pin! LOL
Great minds think alike. The fricking meat pounder that I got was $13 from BB&B! Doesn't that seem a bit ridiculous. Oh well.
When I pound out chicken or pork I use a small pot. I've debated getting a meat pounder but the prices are ridiculous!
I grew up making them like this, caro:
Cut off tops and gut the peppers. Soak them in a sink full of warm water (not boiling hot, but not lukewarm) for at least 10 minutes. Then tip upside down (cut side down) to drain, pat if necessary to dry.
Cook desired amount of rice (use least amount of water if given a range). Let the rice cool slightly, then mix with desired meat (ground beef for instance). Pour in a can of tomato sauce (we used to use just the basic canned tomato sauce, not like a marinara sauce.) Season to taste (red chili flakes, salt, pepper, garlic, onion, celery salt, whatever.)
Stuff mixture into peppers. Cover and cook at 350 for about 35-45 minutes or until meat is cooked through.
