Dinners that freeze

I'm not much of a cook but I've decided that it's time we start eating a better. I don't work on Fridays and figured that would be a great opportunity to make and freeze meals for the upcoming week.

Here's my problem - I don't know what to make that would freeze well and be good to heat up. Any ideas? Or do you know of any good websites?

  • Some items that come to mind  are jambalya, chilis, soups, meatballs or marinara to use with spaghetti, lazagna, enchiladas, Italian sausage and baked ziti, chicken and rice casserole, I guess pretty much any casserole.  If I have extra time on the weekends, I'll cut up veggies and put together different sautes or sauces to use during the week when making chicken in the skillet.
  • To make cooking easier during the week on Sundays I will cut up all my onions, celery, bell peppers etc and divide them up in freezer bags for the week.  This way I don't have to waste time chopping up everything.

  • Check out website menus for companies like Dinner Station, Super Suppers, etc. to get a bunch of ideas too!

  • I have just started doing this. In my freezer right now are: two pizza dough crusts, three large bags of pasta sauce, 1 jar of pizza sauce (same as pasta sauce, just a smaller amount), 2 bags of vegetarian chili, 1 bag of vegetarian stew, two bags of shredded BBQ chicken, 3 bags of shredded Mexican chicken, 3 bags of cooked ground turkey, lasagna (individually frozen for quick lunches--eating one right now), and 2 bags with marinated/breaded chicken. We ate the last of the hamburger patties last night.

    So far, I'm finding all these things re-heat very well and all are very versitile. Makes cooking during the week so much easier. Throw on the stove or in the oven to re-heat, make a salad and/or some veggies, pasta or rice, if neccessary. But your main cooking is out of the way.

  • Shepard's pie is easy to make and wonderful to freeze. Depending on how much you and your hubby eat you can get those aluminum loaf containers (super cheap and reusable) make a big batch and go to freeze town. if you want the recipe of the one I find easy to freeze let me know I'll be happy to write it up for you.
  • Thanks everyone! I really appreciate the suggestions. This Thursday night/Friday will be my marathon cooking day. Eventually I'd like to start adding more and more meals to be prepared for when baby comes.
