I am eating the taco soup right now...over a baked potato with sharp chedder on top!
Came out great and I just loved the flavors. I did use the soy crumbles instead of the beef and am still satisfied with it.
Were you the one that also make the black bean croquettes? I have that recipe printed out but I am not sure who's it is! I am hoping to make those this weekend for lunch with some homemade salsa on top.

Aw you ladies totally make my day!! I love the taco soup because you can do so many things with it - the cheddar chili cups, over baked potatoes.....
And Jenny, my hubby LOVES that taco tot casserole! It's so easy. Definitely not something to make every day though!
