Alright, the long weekend is over.  What's everybody having tonight? leftovers? take out?

  • serious leftovers......let's see, there are a couple wings & fruit from the picnic yesterday, a piece of grilled chicken from chicken caesar salad night, a baguette that needs to be consumed.....and so much more. we went grocery shopping this weekend so the fridge is well stocked!!!

  • I was just thinking while still at work, what the heck am I going to make for dinner?! I didn't cook over the weekend, giving myself a much needed break since I always cook. But, since DH does it for a living, I give him a break! LOL.?

    He mentioned wanting linguine and meatballs and I did take some ground beef out from the freezer so I think that will be exactly what I'll make.?

    lol, I had asked the question not knowing what I was having but I just remembered that I made pulled pork on Saturday purely so that we could have it during the week.  yaaay for pulled pork!

  • i made pulled pork this weekend too!!! lol well, i made a pork roast and am purposing it for different dinners. we had pulled pork on sunday night.

  • I was planning on cooking but got home from work late, and now have a client meeting and then have to go teach class, so DH is making a BBQ chicken pizza (no chicken on my half!)

    nova - is that the crock pot recipe?? DH made it for himself while i was away this weekend and i was very proud of him as his kitchen time is usually spent at the sink ;)

  • i think the pulled pork is my new culinary secret weapon. everyone loves it and i love how easy it is. if DH can make it, ANYONE can!?

    spiedies a binghamton/central new york thing, usually chicken, lamb, or pork but it's good with shrimp too (you just only need to make it that night b/c marinating shrimp too long makes it tough). DH is from binghamton, i'd never heard of spiedies until we met but it's really good.

    i halved this recipe:

    1 cup canola oil1/4 cup white vinegar1 teaspoon fresh lemon juice1 clove garlic, chopped1 1/2 teaspoons dried basil1 1/2 teaspoons dried oregano1 teaspoon dried thyme1/2 teaspoon dried parsley1/2 teaspoon onion powder2 bay leaves1/2 teaspoon kosher salt1/4 teaspoon ground black pepper
    8 wooden skewers, soaked in water for 15 minutes2 pounds cubed beefItalian bread

    ?DIRECTIONS

    In a large resealable bag, combine the canola oil, vinegar, lemon juice, garlic, basil, oregano, thyme, parsley, onion powder, bay leaves, salt, and pepper. Place the beef cubes into the marinade, seal and shake to mix and coat the beef. Marinate in the refrigerator overnight, or for up to 3 days.Preheat an outdoor grill for medium heat. Thread the beef cubes onto 8 skewers, dividing evenly. Discard the marinade.Cook the meat on the grill for 15 to 20 minutes, or until cooked to your liking (you can make a test skewer if you want). To serve, place a whole skewer of beef on a slice of French bread. Hold onto the meat using the bread, and pull the skewer out.

    Sure I think dinners like that & the shred cancel each other out. No??

    OMG CHEEKY!!  words cannot describe how much I love you right now!!  when I was growing up my bffs aunt & uncle lived in Binghamton and we used to go up there every summer. Anyway, they made chicken spiedies and I always loved them.  I won't bore you with the whole long story but I always wanted the recipe and I was SOL cuz it was a big family secret. 

    fast forward 10-15 years, and here you are with the recipe I wanted all these years... YOU ARE THE BEST!!!!!

  • aw, shucks girls! i am psyched to try the homemade version tonight.?

    if you find yourself at a wegman's, they have spiedie marinade and it's pretty damn good. i add a little lemon juice and lemon zest to it.?
