What's everyone been making for dinner lately? I've been seriously lacking in the inspiration and motivation category to find or try new recipes!

We had ham and macaroni and cheese on Sunday and pizza last night. Also planned are salads, chicken salad on whole wheat pitas (a different recipe with grapes), tacos, chicken/vegetable/fruit kabobs on the grill, southwest burgers, and lasagna.
I made a yummy fruit pie too that was similar to this recipe but I made a graham cracker crust instead, made it in a pie dish, and used everything low fat. I also made it with kiwi, strawberries, and blueberries.
We don't do meal plans, rather we kind of fly by the seats of our pants and figure each evening's meal out when we get home, based on what's in the fridge and freezer.
But last night we had a REALLY good dinner: lemon/dill pan-seared salmon; sauteed fresh spinach with mushrooms, garlic, onions and sundried tomatoes; and baked (microwaved) sweet potatoes.
The at-home menus the rest of this week will definitely incorporate spinach and mushrooms, though, since I picked both up from Costco last night. I'm thinking Chicken Marsala on Wednesday -- mmmm!
Pookielove - can you please share the recipe for the General Tso's tofu? It sounds interesting. I love General Tso's chicken, but haven't seen it made with tofu!
I have a oven roaster chicken defrosting in the fridge today, not sure what I'm gonna do with it yet...
I was feeling that way when I was trying to plan meals for this week. I always try to plan ahead of time that way I know what I need from the store. This week is
Seafood Pasta
Grilled Pork Chops/Veggie/Mashed Potatos
Taco Salad
Grilled Chicken/Rice/Veggie
Burgers/Fries
I love those Birds Eye steam in the bag veggies, if you haven't tried them I reccomend them.
We use this recipe but we just substitute cubed tofu for the chicken and vegetable broth for the chicken broth. We really like it! And, you can actually find General Tso's tofu on a lot of Chinese menues. It's just that they call it bean curd, not tofu
M: grilled steak, steamed cauliflower, pasta
T: skillet noodle lasagna, salad, homemade bread
W: marinated grilled chicken, green beans, wild rice
Th: leftover skillet noodle lasagna
F: chicken pot pie
I also have a "quick" tag on my blog that is stuff I usually make during the week when I'm pressed for time....and a "Menu" tag that shows all my past menus for ideas.
