I'm going to be a cooking maniac tonight and plan for the next 7-10 days. I've got the protein covered. Any yummy and low fat/low cal side dishes you love? I have a feeling I'm going to get sick of sauteed veggies.

I totally dig mashing up steamed cauliflower and adding stuff to make it taste like mashed potatoes.
other than that, veggies, veggies, veggies.
brown rice (if you can stomach it, i can't so i eat white rice)
baked potato - you can add all kinds of toppings. spray butter, salsa, a little bit of velveeta light. I like to mix velveeta light and salsa.

Brock-- Luckily I loovvee brown rice. I love the sprouted and unsprouted whole grain rice from TJ's. It's soo good.
You are so lucky. I have tried so hard to like it but it's one of those foods that I gag on.

we usually just wing it. Steam, mash with l/f sour cream, garlic, l/f cheese, salt & pepper.

I like lentils. TJ's has a package of lentils and you can mix it with parsley, celery, cilantro, tomatoes, etc. And then just add a little olive oil and balsamic. It will make several servings and is so good for you!

oh, I also do a lot of big bean salads.
I like to use:
garbanzo beans, jicima, carrots, celery, onion, cucumber, and some fresh herbs. top with salt pepper & rice vinegar.

Nothing breeds faster than Crazy
I like using squash in place of pasta. You can make pretty much any pasta dish with it.
Salsa is one of my favorites too. You can dip uncooked veggies in it or serve it over a salad. Plus, you can hide all sorts of nutrition in salsa because the basic ingredients seem to overpower a lot of veggies.
I know potatoes aren't the healthiest, but you need some carbs in there somewhere! these are super yum, easy to make, and aren't too unhealthy:
