Veggies at breakfast?

Any ideas how to incorporate veggies into breakfast, other than an omlette?

I want to start eating healthier and more veggies is certainly the way to go, but I have no idea how to do it at breakfast other than omlettes and tomato juice.

  • I'm still only thinking eggs--but what about an egg on an english muffin with avocado slices and morning star fake bacon?

    That might sound gross though. I happen to love avocado on anything and the Morning Star "striples" are awesome and very healthy. GL!

  • I wonder if you could make some sort of potato and zucchuni (sp?) casserole, kind of like hashbrowns. I bet you could make a pan on the weekend and then just heat up individual servings throughout the week.

    There's the cookbook that Jerry Seinfeld's wife wrote - Deceptively Delicious that hides veggies in foods. I think she had a recipe for sweet potato pancakes. Good for you! We should all get on the veggie wagon!
  • This doesn't include the veggies you wanted but I found a great breakfast idea a few monthes ago that is healty and filling, breakfast sandwiches. I use one egg and one egg white and cook them in a small bowl in the microwave (cook for about 30 sec, stir and do another 30 sec. or so until its done). Than put the egg on a lite english muffin. Sometimes I put salsa in my eggs or DH will put cheese on his sandwich. I'm sure you could mix in other veggies to the sandwich too. I like to have that with a small cup of fruit like watermelon or strawberries. It keeps me full all morning.
  • This might be a little extreme for you, but what about adding a small green monster to your breakfast?

    There are a ton of variations, but it's basically green veggies (spinach, kale, whatever) with fruits to make it taste better, a little milk, etc. 

    It's a bright green health smoothie. You can google it :)

     

  • How about some avacado? ?Very tastey? ?Or add some green/red peppers to your eggs.
  • Avocados sound like a winner. 

    I have to admit I'm afraid of pretend meat, so almost anything Morningstar Farms is out for me.

    And now I'm off to Google a small green monster...

  • OK, back from Google, and this is what I found...

    Green Monster Smoothie
    1 cup milk
    1 cup raw spinach
    1 frozen banana
    1 tbsp peanut butter
    (optional: 1 tbsp flax seed meal, protein powder)

    Blend all in a blender. Drink up!

     

    Unfortunately I don't have a lot of spinach on hand, so I will not be able to try this just yet.  But I am intrigued.

    Next time you go to the store, get some kale to add to that, too! You can't taste it in a smoothie and it's so so good for you. I've been doing it a ton with spinach and kale for Amelia with all of the fresh fruits and veggies out right now and she loves them! 

    Another idea - I sometimes just do lunch-type foods at breakfast. Wraps and sandwiches are an easy way to add lots of veggies - different lettuces, tomato, onion, cucumber, avocado, sprouts - the list is endless. You can just go veggie or add them to some turkey or cheese on all kinds of wraps, bread, etc. 

  • I just add lots of veggies to my eggs. 

    You could do a quiche or fritatta instead of an omelette for something different.
