Inspire me please

I really need to cook more. A and I are both getting sick of frozen pizza and Pasta Roni. I have a few recipes that I love to make but I need some fresh ideas for things that are quick to make. Any ideas?

Oh and Tiff, if you wouldn't mind sharing your enchilada recipe, I would be very happy. They were soooo good!

  • I made some chicken the other day that h loved. I will look for the recipie online and send it to you. It was out of my cooking light cookbook. It was pretty basic.

  • For easy mid-week meals, I sometimes make tuna melts or grilled cheese with soup or chicken cesear salads.  Do you have a crockpot? You could try making something ahead of time in that. Although besides chili, I dont have any crock pot recipes I can recommend.

    I was actually going to blog about it soon because its really easy and yummy, especially since I use the Costco Rotisserie chickens to make it.  I normally make a side salad or sweet potato fries with it.

  • We've made the kidney beans w/rice & spinach burritos from Angies blog. They are SO good, super easy to make & last for a few meals. I just had that last night. :)

  • I love couscous for a quick side dish. You can throw almost anything into it spice it up. In the summer I make it more like a salad. Perfect for hot summer days.

    Follow the directions on the box and let it sit for a little bit. Then I added some canned corn and black beans, along with some chopped tomato, cilantro, red bell pepper, little olive oil, salt and pepper. I think I may have added some cheyene pepper and cumin as well.

  • Awww... you ladies are such great cooks.  My DH is the cook in the family.  A few days ago, I was making chicken and I burnt it b/c I was too busy playing FT, and forgot all about it.Embarrassed He ate it, though. Poor guy.

  • Im not the cook in the family my husband is but If I'm trying to throw something quick together I'll make taco salads I'll buy the Rosarita vegetarian or low fat beans and instead of ground meat I'll use ground turkey and I just add taco seasoning to the meat for flavor. all you have to do after you warm up the beans and cook the meat is cut up some lettuce and tomatos and add tortilla chips n dinner is ready :0)

  • I've made this rec before, and seriously, it's the bestt. kraftfoods.com has a million recipies that are fast and easy and ALWAYS good. I've learned a lot about cooking just by trying different recipies and it's made me more adventerous to creat some meals all oon my own, something I couldn't even imagine doing not too long ago. They even plan a weeks worth of dinners for you complete with shopping list. I found that half the items I already had.

    They have a magazine! I need to get on that! I do have their App for my iTouch. I use that all the time!

    I had no idea it was a paid subscription now!  Now that I think about it I haven't gotten in a while...

    I had no idea it was a paid subscription now!  Now that I think about it I haven't gotten in a while...

    I got one a month or two ago saying this was the last one I would be receiving unless I fill out the subscription form and sent them some money. 

  • I forgot all about that Kraft website I need to go look at that again.  When I need inspiration I turn on the food network and watch a couple shows there. Usually something catches my eye and my tummy, plus you get to see it being prepared and I'm a visual learner.  Rachel Ray has a site with recipes and videos and food network has one (not sure if there are videos on that one).
