  • Melanie, MH would've approved of the towel.  It was a family movie, though. Wink

    Cajun Shrimp Stir-Fry (note: the only way I could link it was to the PDF file).  I made this like two weeks ago and OMG, YUM.  I was so excited to have leftovers! LOL

    Chicken Cordon Bleu

  • Italian-Style Chicken (sorry, no link.  It was an e-Mealz recipe.)

    ? lb boneless/skinless chicken breasts

    (? t salt, ? t pepper, 2 t olive oil, 2 T white wine)

    4 c fresh spinach

    ? c sliced mushrooms

    ? c diced Italian style tomatoes, with juice

    1/3 c shredded part skim Mozzarella cheese

     

    Cut chicken breasts into tenders. Saut? chicken in a large sprayed pan until lightly browned. Add in remaining ingredients, except cheese. Cover & cook 4 ? 5 min longer. Remove pan from heat and top chicken with shredded cheese. Let stand until heat melts cheese.

  • Another e-Mealz recipe we LOVED:

    Breakfast Dinner Pizza

    1 Boboli wheat crust

    4 oz 2% shredded cheddar

    1 pkg RF bacon pieces

    2 roma tomatoes, sliced thin

    (? c egg sub, ? c FF milk, 1/8 t basil)

     

    Place pizza crust on sprayed, solid baking sheet. Layer bacon, tomatoes, then cheese on crust. Whisk egg, milk, basil. Drizzle evenly over pizza. Bake @425, 25 min or until egg mixture is set.

     

  • Another e-Mealz one:

    Creamy Penne & Squash

    8 oz penne pasta

    1 small zucchini

    1 small yellow squash

    (? t dried dill, salt/pepper)

    1 roma tomato, diced

    1/3 c FF half n? half

    2 to 3 oz FF crumbled feta cheese

     

    In large saucepan, boil pasta. Meanwhile grate zucchini & squash. Add grated zucchini/squash to pasta for last 3 min of boiling.

    Drain well. Return pasta/squash to large saucepan, and stir in tomatoes, cream, and dill. Salt & pepper to taste. Continue to heat for 3 min. Remove from heat & toss with feta. Serve warm.

    (This was pretty decent; my husband didn't like it a ton but it was a fairly fresh taste.  I also don't think he salt & peppered it much at all, so once I added a pinch more salt, I thought it came together well. It does have a fairly strong dill flavor and I don't think you'd HAVE to grate the zucchini & squash.  Maybe dice it.)
