Pickled Cucumber Salad Recipe

Just wanted to share a family recipe for an easy cucumber salad that my family has made for years.  I figure those with gardens are starting to get their cukes now.

Peel, score and slice 3-5 cukes  and place in a bowl.  Slice an onion (as much or as little as you want) and put in the bowl, too.

Add 1/4 sugar and 1 tsp salt.

Cover and let sit overnight or until the cukes make their own water.

Add 1/4 cup oil and 1/8 cup vinegar.

Enjoy!

  • I made this tonight, except I use water instead of oil.  You can add celery seeds also, if you have them and like them.  They give it a little extra flavor.

  • Thanks! This sounds good. We didn't plant any veggies this year, but if it's like other years, we're about to start getting a ton of cukes from people who did.  This might be a stupid question but what does it mean to score a cucumber?

    You run the tines of a fork along the length of the cuke giving the edges a scalloped appearance when sliced. I don't know if it makes them give up their water easier or not, but it looks nice!
