Shrimp recipes, the second is for the grill. You don't need to really measure exactly either, I usually use a lot of garlic.
Shrimp Scampi
1/4 C. butter
1/4 C. olive oil
2 T. chopped parsley
1 T. chopped garlic
1/2 t. salt (optional)
dash cayenne pepper
Melt butter. Add other ingredients. Simmer.
Spread shrimp on a cookie sheet. Drizzle butter mixture over shrimp.
Bake at 400* for 8-10 min. Serve over pasta.
Marinate for Shrimp on grill
3 (or more if you're like me) cloves of fresh garlic
1/4 C. chopped parsley
1 t. basil
1 t. prepared mustard
1 t. salt
1/2 C. olive oil
Juice of 1 lemon - about 3 T.
Onion chopped
1 pound of shrimp
You can either put the skewers through the shrimp before marinating or after. It's less messy to do it before though and remember to soak the skewers.
Marinate in the refrigerator for a few hours. Then grill, turning once. It only takes a few minutes on the grill too depending on the grill and the size of shrimp.
