Favorite veggie picnic dish?
Hello! Attending a potluck picnic and wondering if anyone has any ideas on a vegetarian item that could be served room temperature? People have already vounteered to bring a pasta salad, mac 'n cheese, and fruit salad so I need to come up with something different. Thanks!

Ohhh as a pseudo vegetarian I agree with, D pinwheels rock! Also hummus and pita chips!
I made this as a side dish - although we ate it warm, I would imagine it would be really good at room temp. and you can easily sub for any veggies you like or that are on sale.

Bring the beer and ranch to a simmer, slowly stir in the the cream cheese until mixture is smooth then add the cheddar, stir until creamy, serve at room temp with pretzels and fresh veggies
