What?s for dinner ladies?

So three weeks ago DH was inspired to try eating vegetarian for a week to see how it would make him feel.  My sister is a vegetarian and my close colleague and college roommate are vegan, so I am no stranger to long meatless stretches.  However, DH grew up in a VERY meat/seafood happy family and I was shocked that he wanted to go for it.  We tried it for a week and we felt good, so we have been meat-free for 2.5 weeks now.  Anyway, we have been getting very creative in our vegetarian cooking, but tonight we are having vegetarian chili over basmati rice.    What are you ladies planning?

    It's amazingly simple, and my meat-and-potatoes man is in love with it. We get fresh ravioli from a place nearby and it is HEAVEN.

  • Not sure.  On my own tonight and don't have a lot in the house.  Thinking of trying this out: Dinner Quick: One-Bowl Microwave Macaroni and Cheese.

  • Today is a Make something with Potatos day... I bought a 5lb bag. I am going to get creative.. I think we are having breakfast for dinner.... Eggs, Country Potatos and I just might pick up some bacon. with sourdough toast.
  • Shake Shack!! Freakin' finally, i have yet to go this 'summer'. Big Smile
  • I'm actually dining out tonight, for Cajun/Mexican food at Calico Jack's Cantina. Makes my leftovers of mac & cheese and rotiserie chicken (which I've eaten for two straight days for lunch), that much less appealing. Especially, since that will be my lunch again tomorrow, but with veggies this time!
  • Nutri-system!!  Blech. I am so sick of it - it's been four weeks already!

    DH is on his own while I try to get back down to my birth weight. Stick out tongue

  • So seriously - I think we must have parallel eating lives!! haha.

    About a month and a half ago, DH and I decided to really limit our meat consumption after watching Supersize Me. DH came up with the plan and it is as follows: Limit meat consumption to one lean meat (no red meat) per week (as in just one meal out of 7 days). We can eat as much seafood, veggies, fruit, grains, etc as we want. 

    We were doing really well with it - I think thats what caused me to start losing 1lb per week - I don't know where I am at this point. DH is definitely thinner -but he's also been more active recently. The past couple weeks, this has been kind of pushed to the wayside on my part - I'm eating whatever looks appetizing and can stomach. I think I'm up to meat 2-3 times a week. But when we are home, we still stick to the 'eating lifestyle' as I call it. I think its really similar to being a flexitarian.

    ANYWAYS, that was a major ramble. Tonight for dinner I think I'm on my own as DH has a meeting after work and then is going indoor rock climbing with a friend. Annies Mac & Cheese or Pierogis or maybe just Lipton Noodle soup. And hopefully I'll not get violently sick like I did last night right before dinner!

  • It was supposed to be taco night at my house (my sis and her 2 kids were gonna come over), but being my sis has a pool at her house and the kids wanted to go swimming, I packed up taco night and brought it to her house. She only lives like 3 blocks away from me. =)

    I went to Shake Shack for the first time ever two nights ago!  Of course the wait was ridiculous but oh so yummy, and it was awesome to sit outside and enjoy the evening.

    I'm not sure what we're doing tonight...I cooked last night and am not in to cooking again tonight, so maybe we'll wander around the neighborhood and find a cafe or something that looks inexpensive and tasty.

    That's great! DH and I have been eating vegetarian for almost 3 months. We've found a lot of great alternatives, which we should have noted in our blog, but we got lazy. 

    Since we did laundry, I heated up a pizza, while DH sauteed some onions for the topping. 

    If you're interested in some recipes, you should check out vegandad.blogspot.com. I'm going to try out his hot wing recipe this weekend.
