I made chicken fajitas - I love Mexican food and making it at home is so much healthier than going out.

Frozen Digiorno microwavable pizzas...pepperoni for H, cheese for me. Super duper healthy, huh? That's what we resort to when we don't get around to eating dinner till 8:30 or so...
We had chicken parts (everything from the bird but the breasts) and I had to cook a bunch of veggies in the fridge before our trip this weekend.
I kind of made a chicken soup without the soup. I cooked those in a dutch oven on the stove (my new best friend) with an onion, 3 carrots and 3 stalks of celery. Brown chicken, lowered heat and added garlic, bay leaf, thyme sprig, S & P, lowered heat, covered and cooked for 40 minutes. whala! Chicken soup without the soup. We had corn on the cob and a piece of bread along side.
Sorry, you didn't ask for a recipe, I just got carried away.

Mames, we seriously gotta work on this.
::sigh:: I know. Remember my ziti plans??? Foiled by MIL. I did have a small piece of her lasagna for lunch, as well as fruit salad. But since DH works at night, there's ZERO motivation to cook anything even if I had the ingredients. FML.

I know exactly what you mean. DH works nights and I very rarely cook anything.

I went out with my girlfriends for Mexican & margaritas, but DH wasn't leaving for his boys night till later, so I made him a baked potato and he grilled up a small steak for himself.
Tonight we are having inside out ravioli (a lasagna type dish), fresh salad and garlic bread. I prepared the lasagna about a month ago and froze it- it is thawing now and then I will bake it in the oven tonight.
Yeah I do this when DH isnt home at night too - popcorn or cereal are my staples. Cooking for 1 isnt much fun.
