If I make manicotti will it keep if I freeze it? I'm assuming I need to bake it first, but do I cook it all the way and put the final cheese layer on top?

Yes. Here's what I would do:
Don't boil the noodles all the way through. Assemble as you would normally minus the top cheese layer. Freeze. When you're ready to bake it, let it thaw, bake it then add your cheese layer for the last 10 min or so.
Do you think it will still have enough liquid once you thaw it out? I'm not familiar with manicotti so I'm not sure.
Personally, I would still parboil them before freezing just to be on the safe side.
Make the meals first, then wash the dogs, then fold clothes while you watch tv, then put it up after you take a nap.
