I told Greg I want to make his birthday cake this year and of course, I want to do better than just toss a cake mix into a bowl and grab a can of frosting. LOL All he's said is "Chocolate.. other than that, do what you wish." ![]()
(Except he doesn't like fruit + chocolate in cakes/pastries, dislikes coconut, coffee flavors, or various other things. LOL)
But I want to make him the best damned cake he's had, or at least something that he's impressed with. Of course, he's going to be home a LOT that week since he's off and I'm not. So I don't want the cake to eat up EVERY.SINGLE.MINUTE I'm not at work that week.

I don't think I've baked one from scratch in YEARS. When I was in HS, I made angel food cakes ALL.THE.TIME. Probably once a week.. and from scratch.
I don't think you're crazy. BUT does your husband like Mounds candy bars? MH's fave bday cake is the "Mounds" cake which is chocolate with coconut and vanilla icing. It's not hard to make and I would share the recipe if you wanted it. (Then again, the coconut takes a certain kind of person to like it so I understand if you DON'T want it).
It's impossible to make it healthy though...

I'm so not even thinking about trying to make any of these healthy. LOL I'll try that at a later, non-celebratory baking time. But I'm already fearful I'll manage to pick a bad option or f' it up, so I'm not screwing with even trying any lightening techniques (like reduced fat butter). Baking is so freaking strict!
