Vegetarians coming for dinner...
Any ideas for a vegetarian dinner that isn't the usual veggie lasagna?
When our vegan friends come over we usually do a veggie curry and spicy soup. Since it is getting cooler out I was thinking of serving fall flavors. Maybe a soup (butternut squash or onion?), some brie, beets baked with a bechamel sauce, and something else more substantial (this is where I am at a loss and keep thinking a nice roast). This friend is not vegan so I can use eggs and dairy.

My mouth is watering just reading these posts! When is dinner so I can mark it on my calendar
My only suggestion would be pumpkin ravioli, as soon as I read butternut squash, that's where my mind went. Although I'm not sure how that would pair with some of the other things you're thinking of doing.

quiche/frittata
things with beans
Check out Mediterranean recipes as well. They tend to use a lot of veggies and herbs. Will your friends eat fish? One of my friends who is a vegetarian will eat fish.
This is the best pumpkin soup recipe I have found! Its from all recipes, and instead of the whipping cream, I used light cream, and then I added cyanne pepper to give it a little zing! Instead of the cinnamon bread crumbs, I served it with ginger snaps!

I saw a Rachel Ray once where she made a pumpkin whole wheat pasta dish that looked really good.
Everyone else's ideas sound so good, especially since I only had scrambled eggs for dinner.
DH is a vegetarian, so we have a lot of go-to veggie recipes. Here is one from the Real Simple magazine that we modified last night, and it was amazing:

It is for a potato, leek, and feta tart, and it ws soooooo good, and very substatial and filling. We did make a few modifications- subsituted the leeks for some white and some red onions, added some chives and some garlic, and since we didn't have zucchini we just tossed in whatever veggies were in the fridge (we did broccoli and spinach). So it ended up different than the recipe, but the flavors were amazing! Also, we put some tomatoes on top befoe putting in the oven, which roasted as the tart cooked, which ended up really nice, too.
