Your 'Go To' Recipes?!

Every so often I get the cooking bug in me. ?Would anyone mind sharing their 'go to' recipes? ?I'm looking for a few simple and healthy meals to add to our rotation. ?

I normally have good luck with the food network recipes but I'm always short one or two things. ?My new plan is to go shopping once every two weeks, pre-plan our meals, and stock up on ingredients! ?

  • Boneless, skinless chicken breasts cubed and cooked, then add a can or two of diced Italian style tomatoes and simmer.  You can eat just like that or over pasta.

    Ground turkey tacos.

    Spag. sauce with ground turkey mixed in, as well as diced onion and green pepper.

    Chicken stir- fry (I just keep bags of frozen veggies on hand and use those plus low sodium soy sauce)

    Chicken cooked in broth and Kraft roasted red pepper italian dressing.  (This dressing is GREAT! Healthy and can be used as a marinade, in pasta salad, to dip bread in, etc.)

    All my meals center around ground turkey or chicken.  I just try to make sure there are some veggies in there, too. 

  • Various soups depending on my mood. Tonight's dinner: Cubed fresh tomatoes mixed with a few leaves of chopped basil. Set to side to come to room temperature while you do everything else.

    Chop up a clove of garlic or two and some onion (in reasonable ratio). Put into a pan with a generous amount of olive oil and saute. Add some chopped smoked sausage (I use smoked turkey sausage.) and cook until onions are tender and sausage is cooked. Cut the heat and add the tomato/basil mix. Let the tomatoes warm for a minute but don't cook them.

    Throw this over some cooked pasta with some salt and pepper. Add some parmesan or mozarella if you'd like.

  • I often doctor jarred Prego spaghetti sauce with some onion, red wine, and ground beef (you could probably use some ground turkey) and serve it with pasta.  I freeze some to have on hand.  I make chili and freeze it, esp for DH.  I'm going to make the next batch with half turkey.  I make homemade pizza almost every Friday and I use this crust (sometimes with wheat flour).  DH likes it with sauce, pepperoni, and cheese, I like to make my side "gourmet."  I think I throw DH for a loop when I don't make pizza on Friday!

  • tacos from a kit. jarred pasta sauce reved up with ground turkey or beef, mushrooms, peppers and parm. kielbasa with kraut and onions along side pieorgies (the freezer kind).
  • Chicken Tortilla soup

    Ingredients: Chicken shredded (can grill and cube up or use a rotisserie chx)  Chicken Broth, 1 jar of tomatillo salsa (green), chopped green bell peppers, 2 cans of navy beans (or any white bean you prefer)

    Directions:  Combine all ingredients into your soup pot, and heat up- that easy!

    Top your soup with mexican shredded cheese, cilantro and crumbled tortilla chips (I make my own fresh by cutting strips of corn tortillas and frying them in veg oil in a skillet, sprinkle with little salt).

     

    Baked potato soup

    Ingredients: 1 small chopped Onion

    1 clove garlic chopped

    3 tbl all-purp flour,

    3 cups chicken broth,

    2 large cooked potatoes (or a bag of frozen cubed potatoes),

    1cup  half and half cream (or milk),   

    splash of hot sauce

    Directions :  Saute onion and garlic, stir in flour, gradually add broth, bring to boil, stir for 2 mins.

    Add potatoes (cubed), cream (or milk if you want), hot sauce

    Heat but dont boil.  Garnish with shredded cheddar, bacon and chives or parsley 

  • Turkey Taco Salad:

    Turkey Meat prepared with your favorite taco seasoning, your favorite salad mix (we prefer a nice fresh spring mix) topped with black beans, mexi-corn, sour cream, and cheese, with a side of multi-grain tortilla chips and fresh salsa!

    I usually always have those ingredients on hand, and it is a very easy recipe!

  • Pasta bake. You can really make it anyway you want, but this is what we go.

    cook some penne according to package directions..I use whole wheat

     cook some fresh italian sausage in a large oven proof  pan...you can use chicken or pork. you can even do with out

    take out and set aside. Remove fat, but save a little for sauteing veggies

    saute onions and garlic..then slowly add in veggies based upon how firm you want them, mushrooms, bell pepper (color is up to you), mushrooms, summer squash, zucchini

    throw in a jar of your fave pasta sauce and the cooked pasta

    you can  call it done at this point or top with mozzarella and put it in a 350 oven until bubbly.

     ***this will make enough for a couple of days. my sister portions her's out and freezes it**

     

  • My go to recipes are Chicken lettuce wraps,

    Grilling (anything that has thawed out),

     skillet lasagna or regular lasagna,

    risotto (with some veggie and parmesan cheese),

    homemade chicken noodle soup

    fajitas and gaucamole

  • What AWESOME ideas! ?Thanks for all of the response! ?We'll be eating good (for a few weeks at least!)!
  • Another one I've used for a party appetizer too and people like:

    Store bought cheese tortellini, cook and add pesto sauce, shredded parmesan, and a can of red kidney beans (drained & rinsed). Sometimes I saute onion (red or white) and add that too, but not always.
