Need recipes for mexican buffet party
I am throwing a suprise birthday party for my DH and we both love mexican food so i thought i'd make a mexican buffet for the party. This is what i have on the list so far..
seasoned chicken
tortilla chips
soft tortillsa
guacamole
sour cream
salsa
rice
shredded lettuce
shredded cheese or queso
refried beans
I also wanted to make a black bean and corn salsa but i've never made it before so i was wondering if anyone had any recipes for this? Any good queso recipes or know of a really good brand i should buy?
Also if there's anything that should be added to the list, please let me know!

the best black bean and corn salsa is from tastefully simple. its beyond super yummy. i sell it so let me know if you want any!
i would do a ground beef or ground turkey option as well. i like the fruit salsas too myself.
what about a 7 layer dip with all the toppings?
the casserole sounds yummy!

Whenever I bring my salsa to parties, its the 1st to go...
1 can drained black beans
1 can drained corn
2-3 diced tomatoe (no guts)
1/2 onion diced
cilantro, lime, garlic, black pepper, salt, and cumin to taste. Its so Yummy and easy!
Also, could do corn cakes, and enchilada's (sp?)
For dessert, margarita cupcakes are SOOO yummy!
