The Secret to Good Meatloaf...

I am pretty sure I have discovered it. When the recipe calls for milk, I sub Cream of Mushroom soup instead. I usually make a 2-pound loaf and end up using a full can of COM. I also use Italian bread crumbs instead of plain. DH told me last night it was the best one I've ever made and the best one he's had. YAY!

* Of course, if you have an aversion to mushrooms or COM, I don't advise this. ?

  • I use COM too! Instead of breadcrumbs, I use a box of Stouffer's stuffing mix. The chunky "breadcrumbs" combined with the spice pack they include make it deee-lish! :)
  • Post some recipes in the blog! Maybe I can do this. I used to make meatloaf when I lived at home, but your variations sound better.

  • I'm not a blog author as of yet, so I'll just post here for now. The way I make it is ridiculously easy!

    2lbs ground beef

    1 can tomato sauce

    1 box Stouffer's stuffing mix (whatever flavor you like)

    1 can COM

    Mix all ingredients together with your hands in a large bowl, saving a couple of tablespoons each of the tomato sauce and COM for the top (optional). Either place in a loaf pan, or form into a loaf shape on a foil-covered baking sheet. Mix the remaining tomato sauce and COM together and spread on top of your loaf. Bake at 350 degrees for 35-40 minutes or until cooked through. So easy and so tasty.

  • COM sounds dirty. 

    The recipe I used had me using Italian bread crumbs, eggs, milk, Worcestershire sauce, salt, etc. This is a whole new world of meatloaf for me.

  • I use the COM too...

    1 lb each ground beef and ground turkey, 1 egg, 1 cup bread crumbs, 1/2 cup tomato sauce, 1/2 small onion, 2 cloves garlic, 1 can COM.  Mix everything together reserving 1/4 can of soup.  Put into a loaf pan and top with the remaining soup.  Bake.

    I use a meat mix too (half beef/half pork), I also add 1 chopped green pepper, 1 chopped onion, 2 beaten eggs, worcestershire sauce and s&p.

    My sauce consists of tomato juice, apple cider vinegar, brown sugar, mustard and worcestershire sauce again. ohhh, talking about it sounds good, glad we have leftovers!

    I usually serve mine with green beans and garlic mashed potatoes.?

  • I'm willing to try a more sophisticated meatloaf recipe. My mom (who's the queen of ghetto-fab cooking) created the one I use when I was a kid. It's done me well so far, so I've never considered changing or trying something different. Maybe it's time...

  • What about ketchup?  I have never made it but I always thought people used ketchup...
  • Mine is simple and made with applesauce..it is delish!

     We eat ours with ketchup.  

    Meatloaf - the name is gross but what a yummy comfort food for the winter!!
