Chili recipe, anyone have a good one?

I'm going to make chili tonight, yum!  it's kind of Fall like and even though the weather is still nice we've been craving for some chili... Anyway, does anyone have a good tried and true recipe?  I've tried so many recipes and have yet to be really pleased with any of them...

I'd love to duplicate a chili that one of our favorite restaurants make, it's actually a burger joint that serves chili in the winter months and it's made with steak (chil con carne I guess) and it is deee-lish!

  • Okay mine is real simple and no so much from scratch.

    1 - 2 lbs hamburger and 1 Portuguese Sausage brown with 1 cup onion (preferably maui sweet onion) , 4 cloves of garlic, 1 whole green bell pepper, 2 tomatoes (preferably hamakua) all diced of course.  I leave some seeds from the pepper cause I like my chili spicy:)  After all that is cooked I pour in 1 can of tomatoe sauce and 1 packet chili spice mix.  Let simmer for about 5 min then mix in 1 can refried beans, 1 can black beans, 1 can pinto beans ( I don't like kidney beans, but you can throw that in if you like).  DO NOT ADD WATER!!! my sister made this mistake and it changed the entire recipe.  Bring it to a boil them turn down on low heat and let simmer for maybe 10 minutes so that all the flavors can melt together.  Takes about 30-45 minutes to create. 

    I love eating it like a dip with tortilla chips, some cheese, sour cream, olives and salsa on top.   Or over white rice with a dab of mayonaise on top (That's my portuguese coming out...mayonaise is even great on stew)

    Oh how I wish I could add maui onion and hamakua tomatoes to my chili, I miss Hawaii!!
