Frozen meals

I love the idea of making meals ahead of time and freezing them but I'm not really sure what type of meals to do this with.  I've always thought they wouldn't taste as good reheated.  I buy meat in bulk and freeze smaller portions and that's about it.  I know a few of you make the meal ahead and freeze it.  What kind of meals do you ladies make ahead of time and freeze?

Re: Frozen meals

  • Soups/chili freeze very well, as do dishes like stuffed shells, lasagna, and apparently enchiladas (although I haven't tried that one yet.)

    I started reading the blog of someone who does freezer meals and have seen her do sloppy joes, quiches, and casseroles.  She also does marinades and will freeze the marinade, then tape it to the meat she plans to marinade it in.  So all you have to do is thaw the meat and marinade (separately) and then put them together for an hour or two before cooking (or thaw overnight, then put together before work to marinade.)

  • We've marinaded meats and then put them in a bag to freeze (with all the leftover marinade too)

    I also make priuscutto wrapped chicken stuffed with garlic & herb cheese and then freeze it. Then to cook I just thaw and cook. Or tonight we had previously frozen chicken cordon bleu (the healthy girl recipe I posted last week) and just cooked it when it thawed.

  • I freeze pretty much everything.  I have found that the key is to write on it what it is and the date that you freeze it.  I use the frozen meals within a month of freezing them.  I find that the taste is still there.

  • What's the best way to freeze them without getting freezer burn?  Is there a certain type of container or food saver that works best.  I have a food saver but it's not the best.  I am going to invest in a higher quality one soon.

    When I've frozen stuff, I've used whatever I have on hand.  The key to avoiding freezer burn is to get out as much air as possible but also use it within a few weeks, IMO.  When I've made lasagna or other things I need to bake, I buy disposable tin foil pans (I've done that when giving them to others.)  I would LOVE to find some pans that didn't have HUGE lids on top, but that's also why I don't freeze more "ready to bake" items - they take up a lot of space.

    Soups/chili kind of liquids we just use the plastic containers we'd store it in normally (I think we have the offbrand ZipNLock Ziploc ones.)

    For meats or bagged items, if I can, I wrap it in tin foil FIRST, and then put in a bag.  I know you should use freezer bags, but we normally don't have them.  We don't have a sealer or anything, so I just get out as much air as possible (even using a straw if I have to. LOL)

    LOL at the straw!  I can imagine the look on MH face if I was doing that and he walked in!

  • I think I made the Chicken Tetrazzini for a friend when she had surgery (the friend who initially told me she had to have a hysterectomy, but then came back like a year later saying she had to have her ovaries removed? Confused I'm no doctor, but pretty sure that's part of a hysterectomy and someone was lying!!)

    Anyway... it looked less than fantastic, but she said she liked it and wanted the recipe!
